Glad you liked it. I have a Canon S3IS, which has an "intervalometer" that allows me to take one picture every minute. (Note: Canon dropped that feature from the new models.) Then I set it up on a tripod and let it run for a while.
As for putting them together into a time-lapse video, I use Adobe Premiere Elements. Each picture is displayed for about 10 frames (about 3 pictures per second), and I use a simple cross-fade between them to smooth it out.
