  • hi betty. i love your recipes. one quick question. you use skim milk: would the cheese sauce be altered in color if i used my normal 2 percent milk, with the same amount of cheese? i just notice that your cheese sauce is always so smooth and orange colored with only two cups of cheese to two cups of milk. with skim milk. i normally use 2 percent milk, and my cheese sauce never seems cheesy enough with just 2 cups of cheese.

  • @cedward1984 You will not see a difference at all, if you substitute 2% milk for the skim milk. Your cheese sauce may taste a little richer. The orange color is probably an effect of my camera, and I would guess that the colors are the same. (I know in Europe the color of cheese is not orange at all, because the color is added to the cheese in the U.S.)

  • Betty, I've always wondered about the place mats you use for hot dishes. What exactly are they made out of? I've seen videos where you place hot pots and pans on top of those itty bitty things and I was surprised that your counters haven't burned. It's a dumb question but I was just wondering. Thanks!

  • @ryuouji Those are silicone mats. They insulate very well and are fairly non-slip. I've never burned one yet, nor damaged a counter beneath them.

    Since our meals become so repetitive to where I was bored, I've resorted to your recipes. Thanks so much. I finally got my meatloaf right the 2nd time, but for some reason, I can't get the Mac and cheese right.

  • Hi Betty,

    My 2nd attempt was a disaster. I think it's cuz I don't know how to make rue. Maybe I over cooked it? It was watery and lumpy. Do u think it's cuz I used cheddar sharp?

  • @myiphonerocks3gS The sharp cheddar is fine. When you make the roux, you have to stir quickly to keep it from lumping. It should thicken and bubble, but not separate into lumps.

  • @Louise4251 I hope you enjoy the stovetop macaroni recipe. I will plan on making a black forest cake. You can find pancakes in bettyskitchen, and all you need to do is substitute blueberries for any fruit, chocolate chips, or pecans that iIused.

    So, I cooked 16 oz Macaroni so I thought I'd just double everything. It was great except for the sauce's texture was almost doughy. Should have I not doubled the flour? What did I do wrong? Over cooked the rue? Undercooked the rue? Help. I plan to make this for a potluck soon using 16 oz package macaroni.

  • @myiphonerocks3gS You should double everything. Just work slowly, making sure every part gets done properly. If the roux is giving you trouble, start with more butter, melt it, add the flour and stir quickly over low heat, then add the milk. Once this thickens, add the cheese and combine with the cooked macaroni. It should come out perfectly.

  • @wapatv4 Hi Tom, yes you may cook just half of the macaroni and divide each ingredient in the sauce in half. That will give you half as much sauce--just right for half the macaroni!

    everytime time i cook my macaroni, it would get overcooked and would be too mushy

    any advice ?

  • @KHooooi Hi Chris, the only reason it would be too mushy is that the cooking time is too long. Stop cooking the macaroni when it is still a little yellow and chewy, then drain it and put the sauce over it. (The macaroni will soften up.)

  • made this last night with pan fried steak and yellow and green zucchini medley with garlic and butter. not only did my whole family love their dinner but my finnicky neice ate 2 FULL plates. great mac and cheese recipe. best ive ever had. i will add some ham chunks next time tho for a little boost. thanks betty. youre a beautiful woman and great cook. this equals lucky husband hahahahaha

  • I like to add peas, tuna, and paprika to mine.

    And sometimes heavy cream and/or fetta cheese as well.

    Also, I like to substitute fondue cheese for Velveta cheese.

    (somtimes I just like to experiment with little or no recipe to go on.)

    I've never tried it this way before.

    It looks great!

  • Would 2% reduced fat milk work? And if I don't have velveeta is there any other kind of cheese you would recommend I use? I really wanna try and make this, it looks so good! But alot of the stuff you make looks and sounds wonderful!!!!! Love your vids!

  • @MaeTheWolfDemon Hi Selena! Yes, 2% milk is fine. The cheese doesn't have to be Velveeta. I chose Velveeta, because it is a soft and creamy cheese spread, actually. Just pick a type of cheese you can obtain, maybe Cheddar, and substitute it for the Velveeta. It will work well.

  • Hi Betty - you DO love your self-rising flour haha. So cute. SR flour is not common here in Cda...we tend to use basic all-purpose Great stovetop recipe. Thanks for sharing and inspiring so many. Best wishes

  • It's really quick and easy cooked on top of the stove. I have another version that is oven-baked and one that is tomato and cheese-flavored. These two are a little more trouble, but also really good! Thanks for commenting! I hope I can keep you supplied with good recipes!

  • Yes, I prefer Velveeta for the stovetop version and Cheddar for the baked version, but you can swap them around, and they will be just fine!
