In other words, your hands won't twitch if you get shot in the head. In octopus, their tentacles are part of their brain network. Tentacle control signals don't come from their brain but from the tentacles themselves. Tentacles you're seeing are still alive in a sense. Anyhow, I'm no biological expert but I don't think muscles would twitch that long.

Actually, for seafood dishes such as these, it is kind of necessary to cut it up alive. They don't have the time to lay it dying, as they don't die very fast. Refrigerating it makes it taste like crap. Raw seafood refrigerated is nasty as hell. Of course, it doesn't matter if its refrigerated or not if its a cooked dish, but for a raw dish, it matters a lot. You can literally taste the frozen-ness if not killed right there. Frozen seafood can only taste good for a limited time
