He was just proving that by simply heating this extreme array of different substances up, he could extract the carbon from it, carbon being an element, formed the dark black layer of "soot" on the top. She put the salt in the middle to prove that, Salt, being NaCl, Sodium and Chlorine, which contains no carbon, would not have that burned layer on top of it, but rather stayed virtually the same, save some slight figure changes.

And he is correct, Julie Powell is an extremely vile person, you only need to read the reviews of her book "Julie & Julia" on Amazon to find that out. Julia Child, before she passed away, said she didn't want to be associated with Julie Powell in any way. The Julie in the movie has no resemblance at all to the real Julie Powell, who is a disgusting human being.
