  • I cant seem 2 get the right consistency of icing to make the roses...........yous seems pretty thin and creamy. When I have mine like that it falls down and then when i have it stiffer, the end of petals are all jagged.....PLEASE HELP:(

  • maybe you should try to use a plastic piping bag they help thr icing from craking and it seems that if you use them you don't have to press that hard

  • To make a rose, first you need for the bud to be higher, then you make 3-5-7 petals.

  • I was almost gonna say it was ugly, but then it turned out decent. I just think the petals should have been more strong and solid. It would have given it a tighter, more realistic and sophisticated touch. It almost ended up looking like a Wal-Mart rose... ew. :(

  • It's called a rose nail. It's pretty much a small round disc that's been welded onto the top of a carpenters nail.

  • actually, you make the base with the round tip and then use the petal tip. Wilton teaches it that way

  • But if you make the base with the petal tip then you don't have to make a second bag or change tips or anything. When the rose is finished you would never be able to tell which tip you used to make the base.

  • You have overfilled your piping bag. Your petals should be shorter. You need to keep the wide end of the tip touching the base portion of your rose.

    Try using a tip #97 to make the petals. It gives the petals a nice curl. Good luck with the wedding cake.

  • Confectioners sugar, Powdered sugar and Icing sugar are all the same thing, Most of the time you can find them at local grocery stores.

  • Yes they do sell it in regular stores in the baking section close to the regular sugar, they sell it in the grocery stores where I live and I am pretty sure they sell it at stop and shop. However If you can't find it, just take 1 cup of regular sugar put it in a coffee grinder and grind it till it is a powder and mix in 1 tablespoon of cornstarch. I haven't tried that myself but my friend who also bakes uses that as a substitute for icing sugar all the time and she says it works out pretty good

  • The simplest way to thicken icing is add a tablespoon or two of icing sugar, that is the only way I usually thicken my icing sometimes I put it in the refrigerator for a half hour or so but only if my icing has a lot of butter in it. But I don't advise chilling the icing before i ice the cake with it and i am planning to cover it with fondant because as the icing comes to room temperature it will make a bulge underneath the fondant. But the best way is to add more icing sugar. Hope that helps!

  • I have a special trick. I cut up parchment into a bunch of little squares. Then I put a small amount of icing on the nail (just enough to make the parchment stick). Then I make my rose on the parchment paper. When done I lift the rose off the the nail using the edges of the parchment paper. I put them all on a cookie sheet and freeze them and then once they are frozen they peel off of the paper easily. I find this keeps their shape the best.

  • That's a really good idea! Thanks! I was actually planning to make a cake for my mom (because I forgot to when it her birthday! yikes!) and she really likes roses and when I make roses I am ALWAYS worried that somehow someone when trying to take something out of the fridge they will ruin the shape of the roses. So thank you very much for that tip, I will keep that in mind when I make the cake tomorrow!^_^

  • @ramarama82 thats a good idea! ive always just used the wilton flower scissors/lifter.

  • Some people use a spatula but its better to use a thing called a rose lifter I think but if you don't have that then its all good just use a pair of big scissors and "snip" it off the rose nail. ^_^ hope that helps

  • yeah it is easier to do it with royal icing. and btw u might want to get the air pockets out of the bag because then it wont get the riped petal look

  • Did you end up making your wedding cake? How did your cake turn out, I'd love to see a picture of it! You did a nice job on the rose, I thought it was very pretty for just a practice one!

  • I guess kneading the bag might do it. Mainly, you need to make sure the icing isn't too dry if it's been sitting out. You can always add a splash of milk to it.

  • I find that buttercream works better for me, but it can't be too soft, sometimes I chill it for just a bit.
