As they work in conjunction with a verity of systems, so the wheel might be 5,000 but the items in conjunction that enable the wheel to even work with everything else is ( very expensive. )
I would say that the left set of figures is for water temp and the right will be oil temp. Both measured in degrees Celsius. The cooling systems on these are pressurised which allows the coolant to run above 100c without boiling. This allows the use of smaller radiators which reduces drag.
