When I make a curry base I always put minced garlic,ginger,bay leaf,clove and cardamom into the bottom of the stock pot with a little mustard oil and brown of. I add no liquid at all as all of the water comes from the onions. 20 lb of onion will yield about 4 to 5 litres of base sauce.
Yum. This looks delicious, but I can't help thinking about the millions of people who are going to sleep tonight with nothing to eat. No food at all. And the wars rage on.

This is what happens when people try to cook indian cooking with classical French cooking style. That does not mean there is no"Base" in Indian cooking. It all depends on which region's cooking style you are looking for.
Just like there is no "Indian language" (we have 25 official languages) there is no Indian food. It all depends on which regional food you are creating the base for?
By the way, the left over mixture is used to cook the chicken in (I believe). That's why I'd like to see the section of the video on pre-cooked chicken as they will probably use some of this mixture with turmeric and oil.

@CURRYHOLIC1 OMG jealous! i realised that i ran out of chicken today and i made a beautiful tikka mix for it to marinade in :( i dont know about you guys but i marinade chicken in the curry without cooking it first and then i cook it with the curry sauce, i put it on a low heat and eventually bring it high enough so the chicken is cooked all the way through plus the chicken has absorbed a lot of flavour from the marinade XD it's so yummy when you put a lot of time and effort into a curry :P
@louiscarr899 An interesting method louis, I prefer to tikka marinade my chicken and freeze loads of it once cooked, then add it to any curry just to heat up without overcooking, this way you can get great tasting tikka to go into any recipe of curry, where the actual curry recipes may be different,
