    Yes, you can but you have to follow little different procedure here. Here is what I normally do, Preheat oven to 425F. Pour batter in tray, cover the tray with foil and place the tray on top or middle rack. Take another tray, fill with water and place on the bottom rack of the oven. Bake for about 12-15min or till done. Hope this helps.

    Did you try to find at indian grocers? If you have ENO, you can leave out cirtric acid. I heard that when lime juice is added, khaman comes out flat. So if you want to try, try with small amount of batter and see if that works for you. Or try with soury yogurt.

    If you follow exact recipe, can't go wrong but if you have tried to be short on any ingredient or tried to do it even little different way, it might happen. Sometimes, temperature of the steamer also matters. So it is hard to tell. Please watch video couple of times before making so in case, you might have missed something might take care next time when you prepare....

  • In case if I have not commented on this recipe, here it goes. Simply superb. I experimented with some other flavouring. Like once adding some garam masala, another time, I had the red chilli and garlic paste, the Maharashtrian style. It was fun. Thank you for such beautiful simple recipes and straight instructions. Funtastic.

  • Hi Bhavana, I have seen other Dhokla videos. Some people cut the dhokla into pieces before the tarka. Also, another lady said not to steam the dhokla more than 7 minutes. Can you please comment on these issues. Also, you mentioned Nylon Khaman. Is there any special besan flour for this? reply will be appreciated. BTW, your dhokla looks marvelous. Yummy!!

    It's really your preference whether you want to add tadka before cutting or after cutting, it doesn't make any difference. Steaming time may vary depending on thickness of your khaman/dhokla, meaning if you fill tray with more batter, you have to steam at least 12-15 minutes on ceramic stove but if you have gas stove, it might take less time so you have to keep an eye on it.. I usually prefer steaming at high temperature for best result. In India special besan is used but

    You can try but overblending may also result in flat khaman and not fluffy, with hand, it doesn't take much of your time so it's not going to make any difference....enjoy!

    Just use pinch of soda or powder not both...most likely soda will work better than powder with souryness of yogurt or citric acid...

    My steamer is about 15 years old now...obviously won't be able to find like mine...but there are many fancy steamers out ther these days...just buy one of those. If you can't find, just use any kind of tray which fit in a big pot. You don't have to have something special...if you have more questtions, please feel free to ask.

    I do khichiya papad lot and handvo in oven but haven't tried khaman yet. If I try will sure share. Usually when I steam my khichiya lot in oven, i put big tray filled with water at bottom and on the top tray with khichiya papad(cover with foil and make some holes) and at high temperature about 500F. And you can also watch one of my khichiya papad start to finish videos where I shared this technique. Enjoy!

    I have never made in other than steamer. I keep temperature on high and water should be hot when you place the plate in. YOu can also keep the plate in while water is boiling and when water is hot enough, pour batter into the plate and cover the pot. Now I have no idea how much time it will take since I have never tried with other pots, specially electric pot. And that might be the reason khaman not coming out well with even othe recipes.

    Always steam on high temperature. If you steam on medium, it doesn't risse properly and it doesn't give good reasult. Try next time with high heat and your steamer should be hot enough when place the khaman tray in.

    I have never made in microwave. The ingredients remain the same but you have to keep an eye on it if you make in microwave since I have no idea how long it takes. Try to make with very small amount first and hopefully you get success.

    Big difference and only tradtional people know it very well. Khaman is made from dal only usually bengal gram dal or besan(chick pea flour) while Dhokla contais rice and dal. I understand that to make instant dhokla, it is made from sooji and corn but traditional dhoklas are made from fermented rice and dal batter. Hope this helps. Enjoy!
