You may want to add that you need to add the shots immediately after pulling when the color is still caramel-ish,(ten seconds is entirely too long) otherwise you are letting your shots sit too long which results in stale gross shots. Just a helpful hint to those reading.
FYI: When you Steam, the machine super heats the water to create the steam more efficiently. This is why when you turn it off, the espresso light goes off, because the temperature is way to high to brew the espresso. When you 'purge' the system as you did, the reason the light then comes back on is because you cleared away the excessively hot water, thus ready to brew the espresso
In the quick start guide under step 4, after letting the machine warm up and allowing the brew light to come on, it says to turn the steam knob and allow 4oz. of water to flow through. This is not included in the operating instructions - other than in the "priming the water circuit" section - are you aware if this is to be done before pulling each shot, or if this is a one-time thing?
I have a question though. I just purchased a Via Venezia and every time I try to steam milk, the little plastic wand lowers and then pops off. Even if I am at the lowest setting of steam. What am I doing wrong?

its from the time the button is depressed to start the pull, until it is stopped. Right at around 18 seconds.
