My taste is only that the gloss of a french polished surface has more depth and appealing then a waxed one, so I leave it uncovered on more decorative furniture not subjected to much wear 'n tear. Maybe I'm a little prejudiced because museum pieces are also unwaxed most of the time. I heard that this in fact is a 19th century trend that made shellac so popular in the first place.
@szametha the wax repells water and it also prevents the furniture from drying out. As far as the sheen is concerned if properly applied and buffed it will still maintain it,s gloss.

why put wax over the shellac? For durability? You lose the typical waterlike gloss though.
