My newest canner came from Fleet Farm to, If I can't find something in a thrift store I get it at Fleet Farm, the only retail store I need. If they don't carry something, you really don't need it.
I haven't pressure canned / jarred anything before but from what I have seen on other videos when people wipe the edges they do it before butting the lips on and rather than wiping the outside edge of the jar it's more the top edge (rim) of the jar that is wiped. Not sure what difference this makes but I think it has something to do with the lid sealing properly on the rim of the jar.
@thehittmann1981 your right, the top sealing surface is what you really want to make sure is clean, if a little piece of food is on the sealing surface it can cause your jar not to seal

I picked up my pressure canner today. I decided to make chili, a nice winter treat! I did a dry run on the canner like you did yesterday.. to get used to it. Everything's ready to go for a fresh start in the morning! Hopefully that will go well. I've had success so far with waterbath. For that method, I picked up a couple bags of cranberries for whole berry sauce..yummmy.
@gardenvespers777 Oh that sounds good. There are so many things you can can. It seems to me that the big stores don't have them in stock yet. I found my preassure canner at Farm & Fleet. They had the one I have 16 qt and I think the 23qt. They are not all that expensive.
Very well done. But if you think controlling it on a gas stove is tricky, try it on a wood stove. Liked the little magnetic wand, haven't seen one of those before. Good job, keep at it. Remember it works great with tough meat like old hens.
@logcabinlooms I bought a Ball Utensil Set for Preserving has the Jar Funnel, Jar Lifter, Bubble Remover/headspace Tool and Magenitic Lid Lifter from Walmart. Im sure the other stores have them. I have seen Misty Shooters canning on a wood burning grill.
Great job!!! Canning is very addictive. LOL The only 2 suggestions I'd give is to wipe off the top rim of the jar as well as the sides. You want a nice clean edge for the lids to seal to. And no need to add jars of water to the canner. :-)

@Allen2045 I bought bulk chicken and bulk pork at Costco. The chicken was breast meat, and the pork was labeled roast. I processed them both the same way and at the same time. I cut both into something about bite size or a bit larger, then covered the meat with some chicken broth. The chicken went to the first layer of my canner and the pork into the top layer. 15 pounds (I'm at 2K altitude) for 90 minutes, then turned the fire off and let it set until morning.
@Allen2045 It's a number 921, but I don't think that means size. I can put 9 pints on the bottom, and 10 pints on the top with a divider between them. I don't know how many quarts it holds because I've never canned with quart jars.
Yay for you!! It usually works out that a pound of meat fills a pint jar just so you can adjust for next time. I've done beef, stew meat, pork and chicken and the pint/ pound ratio usually works for me. If you find you don't like how it clumps together in the raw pack method, you can always cook the chunks just a bit before adding to jars. That's the method I prefer. Good Job!!

I've actually made my pints into chicken salad for sandwiches and it was WAY better than the canned Costco chicken! I put a little chicken broth in mine along with the semi cooked chicken and wow, it was SO good!
gloves cuz youve got a cut on finger whats a lil salmonella between friends lol they do actuall make a canner for home use and sell the metal cans the lds cannery will sell number 10 cans lids and loan the can sealer in some instances or rather rent it for a donation if they were closer id get it to can some other types of stuff matches n stuff like that
@rdnkrfnk That would be a good ideal to can matches and stuff like that. Im so use to having gloves on at work. I also tie my hair back when Im cooking at home LOL. For food I don't thing it would be worth it for 3 people the food would go bad before we could eat it all. Unless it was chocolate..:-)
@Allen2045 yeah i buy #10 cans of tomatoes at sams and freeze or what we dont use only becuz you can buy them cheaper than ya can grow em thats tomatoe chunks or sauce but i was thinkin matches fire starter a first aid kit things of this nature could be stored in them cans and sealed thus keepin it dry and ready for use once labeled anything non perishable that you could fit into a can would make staking easier i wouldnt store flashlight or batts in there but maybe a small radio it would emp prf
@Allen2045 see somtimes them pain pills come in handy that came to me after a few along with an idea im workin on to make one o them small fire extinguishers into a pepper spray delivery system for non lethal home protection one o them should soak an intruder with pepper oil realy well
@cfenster I think that you just want the rings and lids to be warm so they seal better when you use them. A good wash and dip in viniger/water mix should be good enough to clean them. Heck they cook at over 200 degrees so that should kill any germs. Thanks Chuck for watching.....PS hope you do a video on canning.
