  • @JugmoDude you can use any kind of oil with a high smoking point ...sun-flower oil, palm oil, grapeseed oil etc.

  • Some chef came up with " beer batter " a few years ago but here is how it is, the real secret of a crispy fish batter that STAYS crisp is mix plain old flour with some baking powder and a wee bit of salt.

    Then add water,,plain old tap water,,,the secret is that it has to be ice cold and I mean ICE cold.

    If you could aquire rendered beef fat to deep fry with the flavour difference is huge, and for chips Kenebec potatoes only,,,twice fried,,,fuck the cholesterol,,tastes brilliant,,really does !

  • @jeanmunn Just reading your comment on fish batter.... Sorry I know it's a bit old but what do you reckon... about a teaspoon of baking powder to a cup of flour?

    I'm going to do a bit of a battered haggis cook off using your batter and the batter in the video :D

  • @ghostofgar No, don't use that amount,,half a teaspoon is plenty,,problem with baking powder is that if you do happen to use too much you end up with an after taste.

    But as I said previously the water has to be ask cold as you can get it,,,good luck.

  • @jeanmunn Cheers jean, I did make them both, overall I preferred your method... The beer batter was slightly crispier but the baking powder method stuck better and wasn't as greasy

  • @ghostofgar Good, glad it worked out for you,,,God I miss my fish and chips,,,I'm about six weeks away from the start of my golf season and I'm on a very strict diet.

    Good exercise, good food and a few supplements and I should be ready for opening day.

    I've been pretty good I must say,,haven't even sneaked a " Big Mac " at the local McDonalds,,,fruit salad and yogurt for Sunday breakfast instead of my usual nice big fry up,,,,oh well,,have a nice day.

  • @TheDefiantWookie Yeah you can, tried it few times times, it's more the kind of thing you fry then dip into something, as the fillets shrink a lot

  • @TheDefiantWookie I imagine mackerel would be too bony, and any parts without bones would just crumble and fall apart in the batter.

  • @Persadish try dusting the fish with a bit of flour, then allow the fish to settle for a bit on a wire rack. then proceed to dipping it in the batter and fry em up. have been doing it that way for years and have always worked for me.

    Indeed they use beer , but they let the fish marinate with beer and some seasonings and rest for few hours in fridge , take out and make fresh bread crumbs , dip on eggs , and bread crumbs again , and fried it

  • Tried out the recipe and it worked great. I used German Weizen beer (wheat beer) and olive oil instead of nut oil. Tasted great and was very easy. Fish was very lightly battered and perfectly crispy. I often find the simpler the recipe the better it is and this is another example.

  • I forgot to mention I used O'Doul's Amber beer in my batter. And yes, it smelled wonderful.

  • This evening I made this recipe using red snapper fillets. Enjoyed fantasic results with this easy batter. Tasty and crispy. The best! Is ground-nut oil peanut oil? Peanut oil is very expensive in my area so I used canola instead. The flavor wasn't too affect by it. Thanks for creating a web presence on YouTube.

  • why not give it to children? alcohol evaporates at lower temperatures than water.

  • You'd have to drink the batter raw in order to get any reasonable alcohol. It will totally evaporate when you cook it.

  • The alcohol gets burned away in the frying process. Plus english kids can hold their booze anyway.

    1 cup flour.

    1 cup beer.

    1 Tbs sugar

    1 tsp salt

    1 tsp baking powder

    1 egg. This is a very good Wisconsin Friday fish fry recipe. When it comes to beer batter and fish frys, Wisconsin owns the court. Try it, you'll be glad you did.

  • I made this with Plaice today. I have to say it was a tasty success. I also battered a few mushrooms and they were great too!
