  • The Tabasco sauces are definitely overpriced. It is an ancient sauce that uses peppers that are not really the best tasting or hottest. These peppers have more of a sting than they do actual heat. The Habanero sauce is great but way overpriced compared to many others available. In season I like to buy habanero and jalapeno peppers and any others available and simply dry and grind them and use them as a powder. Put them in an empty spice shaker bottle and have a great mess free topping.

  • fill the bottle with whole peppers, then add vinegar and salt, leave on shelf for a year, shake heavily before each use, just top up with vinegar and a little salt when the sauce is running out, the whole peppers slowly break down and you can be reusing this for years, the more years that pass the better! Add a new pepper or two whenever you can fit it in. Much better than dried flakes!

  • very nice. might i suggest something? if you really want the oak flavour, i suggest just adding an oak chip. it's what the new-world wine industries do. all aged in steel vats; with oak chips for flavour.

    if you wanna go all out gourmet. use the fancy rock salts and grow your own chilli. that way, you know where your chilli is from and that its free of pollutants. who knows where that stuff is grown. beside the road in a country that still uses leaded fuel? not unheard of!

  • Its a simple way to make hot sauce. I hope you realize you just make your own anyway you want. of course you can slow cook and age. anyone can. grow a pair and make your own video!

  • it depends. when you cook it you basicly boil it together...if you soak it...it all depends. heat takes time out but in the long run if you dont need it for months try the other... its not too much for the items so experiment.

  • Dude I think you mistook the procces of making your own tabasco. You take red chilles chop them and put them in a blender and add vinger and blend it to prefection and jar it and let it age to improve the flavor

  • no you can also slow cook them to get it perfect and save a lot of soaking time. sorry I made over 160 of these so I may have not done one or 2 100%. Ill revamp it in a month or so and show you the overall way.

  • I age it for as long as I can resist it. I would also say if you heat it up it combines better. Then if you blend it up hot it will be even better. I also suggest wegmans or walmart to see if the produce has haberaro peppers. debate is that there the hottest. Mix with some green chilies and oh yum! Email me and we can swap sauces.

  • I would have to say the biggest plus for making your own sauce i it will have NO SALT. so use as much as you want with out a heart attack. They use salt to preserve... yuk. if you ever had too much hot sauce and your feet swell up like a balloon you know what I mean. Hot sauce at the store has enough salt to kill a rhino. Just try it and see. You want hot sauce make it yourself. You want a spicy salt lick goto the store.

They use red pepper grinded to a dust and that has sat on a shelf for year. you say you use fresh it can just mean from someone else and slapped on a bag to resell.They buy the peppers not grow. They use cheap vinagar not quality or it would not cost only pennies a bottle! They boil it killing all goodness and seal it in a oak barrel made by someone else that has been treated with chemicals so bugs dont eat it. all made from someone else stamped wih there brand

  • before you make a complete fool out of yourself, why don't you visit the Tabasco plant and see first hand for yourself. and no dimwit, we DO NOT grind up the pepper to a dust, we grow our own peppers, and also have other places growing them that way they all won't be affected if one place has a bad summer, or disease. and we do not boil it before putting it in oak barrels. and the reason for the salt is to keep the bugs out, but the fermenting process can escape.

  • Truth is the salt used can only be found on the island where they make tabasco. Its the secret to the taste. Cant be duped.You can make all the sauce you want it will never be the same as tabasco!!

  • franks and tabasco are both not as good as home made. look at all the salt in them. if your a hot freak then youd drink the entire bottle or more in a day and od on sodium. when your feet swell up dont wonder why

  • If you're a "hot freak," or chili-head for that matter, then you wouldn't be using tabasco at all -- but something like dave's insanity or blair's. Also, tabasco does use fresh pepper pulp (not powder) in the production of their sauce. I agree about the salt though.

  • I'm a chili head too BUT when it comes to flavor itself, Tabasco and Franks Red-hot is still the best tasting (besides home made stuff obviously).
