The "snapping" sound in the audio is not the motorcycle but likely a vibration-induced audio distortion effect with the camera's integrated microphone.
I've had the bike up to 95 mph a couple of times. That's as fast as I'll go with it because at that speed the handling starts to get a bit weird.
