well .. my opinion is... sesame seeds will not give much difference for flavor. if the 2 cucumber kimchi tasted totally different to you.. i don't think it's because of sesame seeds.. you just tried 2 different dishes.. ^^

yes you can add more flakes later ..but not vinegar.. once it's fermented.. it will be sour.. hot salt water helps to make the cucumber kimchi texture a little more crispy.. and keep the texture longer..
I made this a little while ago and the flavour is great it really is a good recipe..
but unfortunately i made it WAY too spicy. Don't get me wrong i can handle my spice, i eat kimchi all the time, But i don't know why it's so hot, it would seem there's too much capsaicin in the pepper powder I used. Is there any way I can maybe use a filler in my kimchi sauce to reduce the spicy?
if it's normal kimchi.. like napa cabbage.. I will say add some chunk of korean radish.. or more fresh cabbage without salt.. but.. for this one.. I will say.. eat it as a small pieces... and eat it with rice.. thanks

then.. your kimchi can be too salty since it's smaller pieces.. so adjust the amount of saltness.. and.. the texture can be not crunch..because the smaller pieces will be fermented faster than bigger chunks.. which means.. you might not keep it longer like the original size..

wow.. he had lots of cucumber last year from garden.. but this year we didn't plant anything.. aha.. if you don't have garlic chives.. increase the amount of green onion instead.. yep.. you can use flakes..just the texture of the paste will be a little different..and you might want to grind them with other ingredients to make the kimchi paste.. but taste wise it will be similar.. thanks

Yes u can.. but you have to think...the amount will be different.. hm.. sorry.. I always use sea salt to make kimchi.. so I'm not sure how much it should be to use regular salt.. make salt water.. it will be salty but eatable..
I made this today but didn't really like it. Not that it is a bad recipe. It's not that at all. Just not the style that I prefer. One of my favorite parts of making kimchi is indulging in the fresh just-made taste of fresh packed cabbage or cucumber. However, this recipe tastes sour almost from the get-go and is more suited to those that like their kimchi aged. Only mentioned for those who might prefer a crunchier and less mature taste as I do.
I can agree some part what you said.. personally..I prefer fresh cucumber also.. but I found out.. many people really like cucumber kimchi.. hehe so it's just personal taste.. I'm thinking to use fresh cucumber without soaking it in hot water as I did on my video someday. I know.. it will not be good for kimchi..but experiment... hehe thanks for your opinion.
Oh yes, only a matter of personal preference. The recipe is very good. My mother, who likes the more sour kimchi, came over and raved about these. And you were right about the brine keeping them crunchy. While the fresher taste is nice, those get very soft quickly. These, on the other hand, are still crunchy and it's been at least 4 days since I made them. Making your spicy croaker next and hope you have good luck in finding the crab for gejang. :)
well.. maybe you can't eat spicy food well.. or your pepper powder was hot ?? usually.. kimchi is kind of spicy... (to be honest, kimchi is not that spicy to me..hehe ) all I can say for you now is... eat little pieces of cucumber kimchi with your rice... cut it into very little pieces..it will help.. or sometimes.. (we do this for little kids..) in a cup or bowl.. get some water..and before you eat the kimchi.. dip it in that water..it will reduce some hotness. thanks

yep.. mini cucumbers or thin cucumbers are good for this dish. Even normal cucumbers will work too... just a little different texture it will give..but still good. thanks..

well it really depends, i prefer you use coarse sea salt, it give more flavors and it keeps the cucumbers crunchy even if you leave it in the fridge for days...
ecrpimsks already gave you a very good answer..one thing I will add more... coarse sea salt..and regular salt.. as you can see... their size are different.. the saltness are different too.. so you might have to watch how much normal salt you use. I cup of corse sea salt is different from 1 cup of regular salt. thanks :)

I'm thinking to use fresh cucumber without soaking it in hot water as I did on my video someday. I know.. it will not be good for kimchi..but experiment... hehe thanks for your opinion.

Oh yes, only a matter of personal preference. The recipe is very good. My mother, who likes the more sour kimchi, came over and raved about these. And you were right about the brine keeping them crunchy. While the fresher taste is nice, those get very soft quickly. These, on the other hand, are still crunchy and it's been at least 4 days since I made them. Making your spicy croaker next and hope you have good luck in finding the crab for gejang. :)

well.. maybe you can't eat spicy food well.. or your pepper powder was hot ?? usually.. kimchi is kind of spicy... (to be honest, kimchi is not that spicy to me..hehe ) all I can say for you now is... eat little pieces of cucumber kimchi with your rice... cut it into very little pieces..it will help.. or sometimes.. (we do this for little kids..) in a cup or bowl.. get some water..and before you eat the kimchi.. dip it in that water..it will reduce some hotness. thanks

I don't know other areas in Korea..but at least my hometown,,, my mom never made zucchini kimchi while I was grown in Korea. sorry for this answer. You can make Korean zucchini pancake or sidedishes. I posted the videos before. thanks :)

well it really depends, i prefer you use coarse sea salt, it give more flavors and it keeps the cucumbers crunchy even if you leave it in the fridge for days...

ecrpimsks already gave you a very good answer..one thing I will add more... coarse sea salt..and regular salt.. as you can see... their size are different.. the saltness are different too.. so you might have to watch how much normal salt you use. I cup of corse sea salt is different from 1 cup of regular salt. thanks :)
