please help me i have a kokk e king cookie depositor and i have to deal with a little problem because once the cookie is cutted i need to fix it witk my hands because it is not in a regular shape or line
Well I own a food mfg. company and we want to start doing cookies. Our first product is a smooth easy to work dough and with that this machine worked great. However, I am worried about trying doughs like you are using with chunks. Some tweaking might be in order. As I experiment more I can post results. Sorry if I sounded a little petty. I am rather sweet:P
I have this machine and it works great. I see two obvious problems that anyone in a commercial kitchen should have known first hand. was this a cooking school and new students? First, if you read the directions on their website or manual, it states no big pieces of anything in the dough. It has to be a smooth, small particle type dough. Second, any kinda crumbly dough like what i see here won't work. you have to crank slower, and lower the machine so they fall just right.
:) you sound like a sweetheart. Did you just open your very first bakery? It's cute that you think your opinion matters. It's funny because we *were* aware of all those things, but you see we like to make multiple kinds of cookies in our pastry kitchen because we serve 10,000 people everyday. Serving only doughs without chips, nuts, etc. limits us to a very boring menu. All of the commercial kitchens I've ever worked in did this by hand as it is faster and doesn't limit the variety.
If you *only* use the same dough with no chips or raisins or any other added ingredients, it is possible to use one of these machines effectively. But if you are willing to buy one of these machines please make sure you first ask for a demonstration before you purchase and make sure you are show how to fully clean and reassemble the machine. This machine is *very* complicated and awkward to maintain and it takes a lot of adjustment to make it work to your personal specifications.
