I wouldn't add the coffee either, since I'm not a fan. I'm sure it'd still taste yummy. Coffee dramatically enhances the flavor of chocolate, but other flavors can accent it nicely. If you like, you can experiment with extracts that compliment chocolate, like orange, mint, or peppermint. Banana extract would also be great. I'd stay away from lemon extract, though. I don't think that'd be too tasty with chocolate. I believe I'll try it plain at first, just omitting the coffee.
