I believe what you are seeing could be one of several things. It could be when the machine inserts a small amount of inert gas (CO2 or nitrogen) on top of the wine to disperse oxygen. The machine though, also vaccums out any oxygen while the cork is being put in, so that when the wine expands it will not pop the cork out.
I have a questions about an operation that happens before the Corking is done. At about the 1:37' mark, you see a machine prepping the bottles right before they get corked. What is this machine doing? Is it dosing the bottles with a gas or removing oxygen, I can't really tell. More information on this process in the line would be greatly appreciated, Thanks.
