  • @ArizonaAdventures Not exactly sure what your asking, but in general, I love fermented foods like pickles, sauerkraut, and cultured foods as well.

  • But... I wouldn't trust ANYTHING a college course says..they are the perpetrators of the lies..people have been eating thousands of cans of fruit for decades..they better fear their mates and getting in a car becuase the chance of getting hurt via those are thousands of times higher!

  • This is no different than the egg scared. Article I read yesterday said "66 affected" IN ALL OF THE UK? 66 AFFECTED by raw eggs? Really? 1 in 20,000 eggs MAY be a problem..& they push the fear on raw eggs..the govt loves to spread fear...

  • I grew up on food my Mom canned and we never worried about dates. We just made sure the seal was intact. I never got sick once off that food, not once.My first time being sick from food was at Waffle House when I was 27 yrs. old. A lot of people talk a lot about things they know nothing about. They take one tidbit of info and create fear and chaos with their ignorance.

  • First of all let me say that I LOVE your videos and more importantly I really like the way you think...with that said, I agree whole heartedly that if foods are properly canned/packaged they should be good to eat for ages. I think a lot of people see that 'use by' date and just start tossing out perfectly good food--I will concede that the nutritional value starts deteriorating, but that's a far cry from deadly. Common sense...people sure need to stock up on that too! :)

  • Well,I don't know who this dude is,but I can tell you from experience from generations of canning our own fruits and meats,and dinners,etc that they last for yrs.This guy probably wasn't even here when we did the green pears back yonder.

    Sane and sensible way to deal with canning practices.

    I have experienced the problem you mentioned with both the mandarin oranges and pineapple - I was storing in a cupboard in the kitchen and I believe that heat and moisture played a definite role in the degradation of the cans (I will admit that I WAS worried about your Hubby when you were telling the story of your friend's jars *smile*)

    I subscribed btw - very usable and UN-hysterical advice to be had here.

  • Okay, now get my self in trouble here. Back home, and in my own garden. If I can Its only for a winter are maybe 2 years of storage.. If its something like my peppers that I only grow ever 3+ years I dry it. Vac seal it. Good for years to come.. I do perfer to dry it for long term storage, including fruits. soups. ect.

  • Great info katz! I watched his video, and was just floored at the lack of common sense. How many people eat canned fruit past it's exp date everyday? And yet, we never hear of anyone getting botulism. I went to the CDC website; the stats were a little different that you mentioned, but the end numbers worked out the same. Heck, listening to this guy, people should be dropping dead every day! You've always presented the info in accord to USDA standards & encourage safe food practices! Thx!

  • Great Speech. Your right about everything ,specially pull top ravolli I bought 4 month's ago.I open one after storing it for 4 month's it tasted stale. Question I've eaten a giant jar of pole bean's.The ole lady said there 2 year's old and she said when I open it,I needed to dig out the clear wax on top and dump out the bean into a sauce pan to cook.What was the reason for the wax ? I never ask her about it.

  • I think that most people know that I am poor, so most will not be suprised to know that I have actually eaten canned food from cans that were rusted and bulging, with contents that were grey and tasted terrible, but I did not get sick or die. I have done this more than once, and have actually completely finished the whole thing at least once. Nowadays when I get something like this I just throw it to my chickens and let them filter it before eating the eggs and chickens.

  • I have canned my whole life. My Momma canned our food. My grandmother canned our food. Like you said, if the food is processed carefully, you have no worries. I have never even heard of anyone who has gotten sick on home canned food. I do agree there are some people on YT that flat don't know what they are doing and are acting like experts. Love your videos. You do your homework. Thanks.

  • My Grandmother put the prep in prepper LOL growing up in the great Depression she never threw canned goods away. I have eating canned peaches from her pantry 6 years out of date. Never missed a beat. Not a thing wrong with them. I think JMHO these dates are shortened to get us to buy more sooner.

    LDSPrepper had a pineapple can blowout in his pantry.

  • I recently had a problem and gotten sick after eating a product with that pull tab and one bite didn't quite taste right to me. This was the only thing I ate that the rest of the family didn't eat that night. Never had a problem eating three generations worth of home canned food though. It's pretty rare to even find a home canned jar that I'm not sure about . Even after many years on the shelf. Cleanliness and proper food prepping procedure are the key! I boil my tools too!

  • Seriously canned fruit is just fine for storage past it's exp date, you just have to pay attention for bulged cans, odd smells, pin holes in cans, etc... I just finished up some home canned green beans from 2005 and they were perfectly safe and fine, pressure canned, although the nutritional value  was probably degraded... But I have seen manderine oranged bulging can and a can of cranberry sauce with a hole eaten through. Just have to pay attention to your senses and cleanliness.

  • Kick ass vid! I too watched his vid, right after picking up a case of fruit cocktail to put back for the kiddos. I was like what? Botulisim!!! Funny thing though, I am going to a pretty good University here in my state. It is very well known for agriculture type stuff. So I axed (sorry that was ebonics) I asked a microbiology professor about the topic discussed in your vid. You are spot on. Fruit Cocktail is staying!

  • you wont have to store food for 3 years if you simply rotate it. you dont need a food supply per say if you eat it and re stock it. very good video btw

  • At on point in the video you are referring to, he says we better get rid of canned peaches, pears and anything packed in heavy or light syrup because it's going to kill us. He doesn't say if it's over the exp. date it will kill us, just to get rid of any of it we have because it's going to kill us. Talk about fear mongering. I had unsubscribed to this guy a while back after realizing what a self-aggrandizing blowhard he was. Must go now, the CDC is here to pick up a can of fruit cocktail I have.

  • @snarky75 I knew I had to unsubscribe when he showed all the books in his home library and talked about how well-read they were, how smart his wife and children are, etc. It was just more than I could take. I've always known, that the smartest folks never have to brag about it. Also, in my experience, the smartest folks I know do a lot more listening than talking.

    I'm new to canning so the lack of experience makes me question if I've done everything just right. So far, no failed cans. I just canned seedless raspberry jelly (it looks gorgeous!). Next I'm going to can bartlett pears in a light syrup. Thanks again!

  • There’s a lot of bad information on YouTube so you certainly want to do as you suggest and see if it passes the common sense test. It seems that many in our society have an attention span slightly longer than the average chipmunk and don’t take the time to check facts. BTW, I found a really good article on storing dry foods in #10 cans for 30+ years that was verified by scientists at BYU. Food stored properly will last a long time.

  • Did not see the vid you are talking about. However, I believe that your video was probably the best I have ever seen on canning safely and what to watch out for. Excellent points and your common sense, facts, and EXPERIENCE speak volumes to the apprentice canner like myself. Thank you for posting.

  • I have a number of canned fruits that I bought for the soul reason in storing well past the expiration date. I decided to do a real world test to see what, if anything would be discovered. I have recently opened and consumed one can of each of the popular ones out there. All were at least 2 years expired. What I discovered was every one of them had a can taste. Depending on the fruit it varied on how strong of a metal taste there was. Bottom line is they were all good other than the metal flavor

  • You are right on the money. Though not can fruit related but canned meat, check this out from Hormel's FAQ website. "The processing techniques utilized by Hormel Foods makes the canned product safe for use indefinitely if the product seal remains intact, unbroken and securely attached to a can that has been well maintained. For max flavor it is recomnd that the product be used by 3 years of the mfg. date. After that period, the product is still safe to use, the flavor gradually declines"

  • Good for you! Common sense should rule. BTW, my brother was a Boy Scout when we lived on Okinawa. His troop took an overnight field trip to White Beach and they found a whole case of K-Rations from WW2. They ate tons of it and brought tons home. We had a feast on K-Rations. Mostly it tasted good but the point is that this was in 1967. How old were those Rations? HUH???? Love your videos! You are my favorite canner!

  • @AuntDuddie Oh, and the Battle for Okinawa was in September 1944. And that crate of rations was sitting in a 'bunker' exposed to the elements for all of those years.

  • Great Vid. I just shake my head mostly to the crap I get wiffs of on YT. I know of the VID you mentioned, but I did not watch it. I got the jist of it from other YTubers and didn't waste my time. Alot of these guys storing just dehydrated food don't understand that they can die of malnutrion eating it long term for the lack of essential oils. Humans have been canning food for a long time, there is a reason for it, it works.

"Best by" dates are put on there for two reasons, limit liability of the canning company, and to turn around perfectly good product to make more money! Use your head people and get educated. If its NOT IN THE CAN .. your not gonna get it!

  • I'm glad you posted this. I rotate all my food and some of my store bought can products are past their expiration date. The vid said you couldn't smell or taste if the product had gone bad so naturally I became concerned. Now that I"ve watched your vid and BexarPreppers vid I feel much better and I'm keeping all my expired can foods. I was going to throw them out but not now. Keep up the good work ladies.

  • Hi Katz! Thanks for the great video. I have canned for years even as a young married wife and never had any trouble. Once in a while when you pull a jar off the shelf you can see it is spoiled-because when you check the lid it wasn't sealed properly. Even if was sealed when you put it there. They will sometimes come unsealed. But you see it right away. I have had people tell me that canning is not safe! Do they try it or listen to someone else. Prehaps it is lazy on their part!

    I've felt the same way for years that foods lasted much longer than the expiration date and that properly canned foods would last more than 1 year.

  • We used to eat all the fruit my grandfather canned, never got sick. Heck I have eaten things well beyond the expiration date and never got sick. Just watch or read some of Cody Lundin's stuff he admits to eating canned goods well beyond the date. Great video, thanks for sharing and doing the leg work!

  • You go girl! Great video. Question on canning fruit. I went to a local produce stand to purchase plums for my plum jelly. That is the only way I have canned plums. However, they had some of the largest, most beautiful plums I have ever seen! This got me thinking about maybe canning them in halves of slices like peaches. What do you think? I am on a hunt for my grandmother's Ball book right now! The thought of pulverizing these huge pretty plums saddens me! LOL!

  • When I was young and pretty poor I went to a market down the street and would get the last rotisirie chickens. They turn off the machine and the chickens would rot on one side. We would eat the good side. Sounds bad I know but we were hungry. No one ever got sick. Unless they smelt the bad side. Not canning I know but I like the story. Thanks I agree.

    chance of pathogen growth - period! if canned correctly, there is no oxygen in there.

  • I have a confession...it wasn't fruit - but 2 weekends ago I ate a half jar of nacho cheese that was dated 09.2010. Yes! 2010. My brother told me I wouldn't do it. I ate half of it and put it in a fridge and ate the rest the next day. And I'm still here. Ditto on no bulge, no corrosion, no illness from canned fruit! I'm glad you made this video!

  • @Michigansnowpony PaladinPrepper will eat anything. He never gets sick. I find some old food that's got shoved to the back of the fridge and looks like a high school science experiment gone wrong...he'll say, "Don't toss that! It perfectly good food!" Geesh.

  • I definitely agree with you. As long as I have been canning I have never (knock on wood, lol) had anything go bad. And I always research everything first, especially if I haven't done that particular food in a while. I actually just found a Ball Canning Book dated 1974. But I don't necessarily go by those recipes.

  • You know I have sterilized over 10,000 packs of surgical instruments in the last 5 years. Nothing says sterile like 25 - 90 minutes in a pressure canner. When you have an operation, the instruments used are autoclaved..(pressure canned) in the same manner as the food anyone is processing. In addition, vinegar is used in the sterilization of instruments used for surgeries (water bath canning). If it's the practice of the medical profession for sterility, why worry?

  • Didn't you talk about this in another video? Deja Vu? I watched that guy's video and felt he was wrong, I'm far from expert on canning, never done it, so could make an argument against him. I do know that if he was right we would have a lot of cases of botulism from commercial canneries. It just didn't ring true.

    I've eaten 5-year-old canned peaches... they were a little mushy but the flavor and aroma were still good.

  • @fletcher3913 I don't think I've talked about this before, however, my good friends atticus9799 and Bexarprepper agreed to join me in the fight against stupidity. I know that Bexar addressed the topic in her video a couple of weeks ago. I needed time to cool down. I probably said more than I should have, but I was 'fired-up'. I hate it when someone set themselves up as an expert and has absolutely no idea what they're talking about....and other folks buy it!

  • Tgis was such a great video, thanks so much! I currently have over 50$ of store bought canned apricots, with the pull top lids. They are less then a couple of months old, because I just recently heard pop-tops are a no-no. Do you have any advice for me? Thanks again

  • @306prepper Your pull top apricots are probably just fine, however, I wouldn't purchase any more for long term storage. I also would not stack them on top of each other, putting additional weight on the pull top lid. Just check them before eating to be sure the pull top lid has not been compromised in any way.

  • @Woodsygirl62 Good question. I actually went back and asked the lady who originally canned it along with her mother who is deceased (not caused from botulism). LOL She said it was a jalapeno relish. I promise you, I'll have to get rid of the jar I showed in the video, because if my husband finds it, he will eat it. I must admit, it smelled really good....and it was 13 years old!

  • I agree 110%.. and it occurs to me, that some of the manufacturers(sp?) commit the fearmongering becuz its to their advantage for you to throw out the out of date stuff, and purchase more?..my mother had a pressure canner, but used both methods on beans, and corn. She did something very smart..she observed, opened, sniffed, and tasted. People now days are so dense, and men who are "experts" put up a red flag for me every time! thanks for the info!

  • I have not been posting too much as of late because I have been busy canning peaches, plums, and chunky applesauce. I missed the initial video on this subject, but like you I am very strict about my canning techniques. I can't help myself, all those years as a scub nurse.

  • @katzcradul We ate some canned peaches last night, they were SO good. And botulism free I might add, LOL As soon as I get some free time I plan to do some more fruit canning. I missed a killer sale on blueberries this week, just to darn usy to get to the store. Oh well, I have a bunch in the freezer for a years worth of blueberry muffins and pancakes. I'll be on the alert for another sale.

  • @QueensCabinet Blueberries aren't my favorite fruit, but I do freeze a lot of them for blueberry muffins, and mostly for smoothies. They're so rich in antioxidants. I love them in a smoothie of bananas, blueberries, strawberries, kiwi, and orange juice. (All are frozen except the bananas and o.j.) I never use any milk products in my smoothies, just because I don't like it in there. This is a killer smoothie.

He would have had a running fit if anyone would have tried to throw that away. I don't have a pressure canner either. I hot water bath all my green beans.
