Hi. Go ahead and bottle your beer when ready. It will be about 20% lighter in body and alcohol than it would have been, but should be drinkable. Be sure to mark the 5 gal level in your carboy next time and if you need to top off, use boiled, cooled drinking water. If you top off before fermenting, just add tap or drinking water straight to the fermenter without boiling. Also, if you now have 6 gal of beer in the secondary, you'll need to add 20% more priming sugar when you bottle. Good luck
Hi.Looking for some late advice. I just racked a batch to a secondary fermenter, first time! I had read to add water to the secondary fermenter to bring the volume back up to 5 gallons. With my carboy not marked I ended up added a full gallon of distilled water to my fermented beer. Did I ruin it? What did I do? Might it still be good. I was expecting the secondary to be filled two inches from the top, but my carboy must be 6 or 6.5 gallons.
Good set of videos so far, however I would try to strongly limit the word "Uhhhhh", as you are saying it just about every sentence.

... how long do u let it sit in the secondary fermenter and wont it cause spoilage if u open ur cap and siphon it...

I would never add water to my secondary. It does not mater how much head space is in the carboy.
