To get the top smooth make sure your offset is wiped clean & run it over the top.

For the sides, icing tends to build up around the bottom more so at the end, hold your spatula very straight & go around the cake taking off the excess.

I went to culinary school, so trust me on this.

To make it look smooth, put on a small layer of frosting on the cake and then put in the fridge. When the frosting is hard do a second layer, you cake should look very smooth and will almost look like fondant.
