I'm a fan of Gordon, but if you try to cook a goose like this you will have a greasy mess. Scoring it and roasting it for an hour or so is not sufficient to get the vast amount of fat out. The simplest way is to spike it with a fork multiple times and steam it for 40 minutes the night before. Then rub the skin with salt (and spices if you wish) and put it in the fridge. The skin will tighten marvelously and you can roast it for an hour or so, depending on the weight of the bird.
@lankyFool That's very true. I made this last year, and it was a bad idea to leave all the fat in there. I could barely contain it all! Thanks for the tip - I'll try it this year!

I never thought of letting the goose rest for 15-20 mins. I'd be afraid it would get cold. Still the result looks delicious. Bon appetit.
