  • I'm a fan of Gordon, but if you try to cook a goose like this you will have a greasy mess. Scoring it and roasting it for an hour or so is not sufficient to get the vast amount of fat out. The simplest way is to spike it with a fork multiple times and steam it for 40 minutes the night before. Then rub the skin with salt (and spices if you wish) and put it in the fridge. The skin will tighten marvelously and you can roast it for an hour or so, depending on the weight of the bird.
