  • good recipe, i used a jar of plain pasta sauce instead of canned tomatoes and fresh beans (to avoid BPA).

  • I was really surprised how tasty this recipe came out! Don't know if it makes sense if i said it is a hearty yet light recipe! Very nice.

    Started with dried beans, used all fresh tomatoes, added soy "meat" (first time trying it, and i am almost a convert!), and a little sugar, cooked a little longer to get the flavors from the tomato, and WOW!

  • what i dont like about vegetarian food is that its almost always about soy! i would use red potatoes instead of the soy substitute. potatoes can give you the fullness that comes with eating meat.

  • I am making this again tonight! My family loved it but my boyfriend did not. He said it needed salt and said zucchini and squash were just not a good fit. I understand the salt part even though I was fine without it, but my veggies were ripe and were great in the chili! Whatever, he's not invited tonight :-)

  • @dillynrs Yes, since this is a vegetarian chili some purists will not go for the zucchini and squash. But it's very healthy, and our family loves it! Glad you enjoy it! :)

    You could maybe try using some Hing (also known as Asafoetida) . It's used in curry .

  • he only says it's the best recipe- BECAUSE HE HASN'T TRIED MINE!! lol..good recipe though, but i've had 20 years practice perfecting my veggie chili recipe, which is now even my 3 year old's favorite!! Instead of parsley try cilantro, and add corn(making a complete protein with the beans). We serve our on a bed of Fritos with sour cream and cheese, topped with more cilantro and a squeeze of lime

  • yes protein is more highly to die then vitamin for instant lets take egg we should not cook egg for a long time cause it will get a firm texture and will loose it's protein the whiter the egg remain after boiling it's high in protein which stay with cooking with fish and veg.

  • m8 the recipe is wrong as u r putting the vegetables 1st which is worng and after u r cooking them for an hour bro u killed all the protein and vitamin of the veg. all ready.

    I think there is a lot to be said when it comes to cooking vegetables and them losing nutrients. Does protein really die off after cooking? I always thought that protein, when cooked, changes texture. BTW, eating raw foods is becoming a trend right now.  Cheers!

    There is a great seasoned soy product that we like called Soyrizo. It would work good in this. I would stir in a soy product right after the veggies are cooked. Hope this helps!

  • basil and oregano?they seem too italian orientated herbs for a mexi style chilli reckon this would taste heaps better as the spice blend being chilli cumin tumeric and paprika maybe and with fresh coriander with/or instead of parsley.

    I like to add frozen corn toward the end of making my chili. Cornbread, biscuits or garlic bread and some fresh salsa are good accompaniments.

  • This sounds like a nice veggie chili recipe. I usually make mine with red kidney beans, pink beans, white beans, corn, tomatoes, and beer. I will have to try your recipe too sometime though. It looks interesting. :)

  • Dude, you never told us when to add the bell peppers.  I'm assuming you put those in with the rest of the veggies, such as the zucchinis?

  • I heard it's better to buy dried beans than canned beans. Canned beans have too much salt in them. Of course you have to soak dried beans a day or two in advance for chili as well.

  • after seeing a whole series of your videos, i finally tried this recipe out and it was superb! But I really love yellow squash move than the zucchini so I made my second round of the chilli with 2 squashes and added some extra tomato sauce to made it more liquidous. Delicious! Thank you!

  • Love your chopping skills. I really need to get on that. But what's with the canned beans? I know, I know, I guess if you're trying to help people learn to cook, you need to keep things simple, eh? I do the same thing, but I make sure to tell people to get canned beans that were NOT cooked in salt. The protein isn't broken down properly when beans are cooked in salt and it makes it more difficult for your system to digest.

    Yes, the salt interferes with the cooking process. Of course it's more difficult to digest for some than others, just like anything. But as you know with any bean or leguminous pea, you want to salt at the end of cooking, not the beginning, even if just to make the beans optimally tender and delicious. A lesser known fact is that your body will better be able to utilize the protein when the bean is cooked properly. Beans cooked with a piece of seaweed are even better.

  • I think I would like it with the chick peas, but NOT the green and yellow squash. Once, I was invited to a dinner, where the person made us vegetarian chili with CASHEWS in it, and that recipe was tasty. However, I did not know what else she put in, so I cannot duplicate that one :(

  • Hey Chef, I made your chili a while back and my sister, brother-in-law, and dad really liked it. Besides the two tbsp of chili powder I diced up a bunch of jalapeno peppers & threw those in there as well. Unfortunately though I made it too hot & after a couple of spoonfuls couldn't eat it anymore... lol.

    I'm making it tonight, minus the jalapenos... haha, I was thinking of cutting back to 1 1/2 tbsp of chili powder & adding some chipotle sauce... do you think that would taste good?

  • Made the chili last night & added 1/3 - 1/4 cup of balsamic chipotle sauce... AND... it turned out great!!!

    When you take a spoonful it initially starts of a lil' sweet, but then the heat kicks in :) & my nose starts to run. Oh, added bonus it smells great ;) Thanks again for sharing your recipes and happy holidays!
