its because cornstarch(the stuff in oobleck) is a natural thickener (used in gravies, and whatnot) but it has to be hot in order to thicken. You heated it up in the microwave, thereby enabling the thickening power of the cornstarch. Pretty simple.
A microwave speeds up water molecules which creates heat, thus why we use it to heat up food. When the water molecules sped up, the oobleck became solid because the rapid movement. I'm sure after the mixture cooled, it would be the oobleck we all love.
