    as far as ive messed with oobleck relatively small changes in the cornstarch/water ratio can render significant changes in the apparent physical properties. perhaps a small amount of evap occured that accounts for the observed changes (which explains the liquid center), but who knows what the effect of electromagnetically generated heat will have on something like oobleck.

    its because cornstarch(the stuff in oobleck) is a natural thickener (used in gravies, and whatnot) but it has to be hot in order to thicken. You heated it up in the microwave, thereby enabling the thickening power of the cornstarch. Pretty simple.
