  • if i dont want to add the zests is that ok? I want to make this for my family, but I just do not want to add the orange, will it ruin the "original new york" taste?

  • @dmuneca I've tried this and EVERY recipe requires the zests. You don't taste it so I don't know what would happen if you don't use them. But I suggest just putting in a little as thats part of the ''New York'' style cheesecake.

  • @tirinaj2 No you don't. The spring form is mainly for a viewing pleasure. You can still get the cheesecake out if it's in a normal pan and it won't cook any differently

  • @tirinaj2 I woild seriously suggest splurging on that spring form pan. The cheesecake is so, so much easier to get out with the spring form pan. And it doesn't just have to be for cheesecakes, you can bake really anykind of cake in it too, provided you put a tray on the bottom so it doesn't leak.

  • I put a pie pan filled with water underneath (on a different rack) the cheesecake while it cooks so the condensation keeps the top of the cake moist so it doesn't crack. By the way, in a really OCD chef would say, is that a cheesecake really isn't a cake. It's a custard. In fact, the first cheesecake was actually cooked just like a custard (you know, filled in a ramekin and put in water). THAT is what I do, it comes out the same as normal, except a little more dense and it NEVER cracks for me.

  • Where I live, I can't buy graham crackers or graham cracker pre-made crusts at the supermarket. I made the crust with Digestives but it kind of crumbled all over the place.. any other suggestions? Also I replaced one package of cream cheese with some milk to make it a bit lighter. Thanks for the recipe its awesome and a total crowd pleaser! It was the hero of the bake sale even with a crumbly crust :D

    One good tip to avoid the cake to break in the oven, is to put a glass with water inside with it. The water will evaporate and will prevent the cake to break. Also it will be more creamy.

  • @N2MyIs Sounds like your oven needs to have it's temperature calibrated. This becomes a common problem with ovens.

  • Followed the exact recipe except I used more lemon and orange zest. My crust was the same texture after baked. It was crumbly and very thin and not very crusty. I thought that it was raw because it never turned golden on top but after 3 hours, it set in the oven. My dad couldn't resist waiting a full night to try it and sliced it while still hot.
