Well, since this song is about Laila Majnoon, its main theme is Ishq. Since they´re speaking Urdu, you´ll recognise words of Faarsi/Persian and Arbi/ Arabic and even Turki/Turkish. Laila Majnoon is the same story as Shirin Farhaad, Heer Ranjha and the western Romeo Juliet.

And since the theme is ishq, one can hardly leave out the Sufi aspect. Sufism as you probably know deals mainly with the Ishq-e-Khudai, love of God. So she mentions some Sufi greats like Amir Khusro...

..there are some racists, actually a lot to be honest...who refuse to see and recognise Urdu for what it is and are in denial about it because they hate Muslims (esp. Pakistani) to the extent that they cannot accept that we have something beautiful in our culture.

Nice to see though in this song, that they pronounced the important Qaaf, Khe and Ghaaf of Urdu properly. Something that´s usually hard to do for Bollywood ppl since they´re not Urdu speakers. A good example of that is the movie Jodha Akbar...

..in which even the so called Muslim characters weren´t able to pronounce their own names (Khan) with the Khe very distinctive of Urdu! And this, in a movie that was supposed to be epic.

Also, you´ll find many so called Muslim actors in Bollywood who can´t pronounce their names properly in Urdu. They have taken the name Khan but haven´t even learnt how to pronounce it properly. And anybody who´s a real Pakhtoun, a Khan, would die but not pronounce their surname wrong.
