I think they sorta do, but not really. I mean, they obviously chase them, for what other purpose than to feed on them? And in 28 days, when Jim goes into the church, there's tons of dead bodies, the infected wouldn't really hang out there unless they were there for the food. And when they all finally died out, They died out from starvation, when there were no more humans left. But then again, they could attack just because, they're raging, and not really know how to feed? Idk.

i believe the infected did more of that kind of thing in the sequel.but i think they died of starvation because they would only bite into a person just enough to spread the infection. a lot of people including myself have confused the rage zombies with traditional zombies. and no you dont have to be dead to be a zombie. a true zombie could be an individual without any consious free will or thought patterns.
