1-2 inches at the top is sufficient and having the mason jar lid helps as it allows for some expansion. You do want the lid tight- but not impossibly tight. Once the fermentation is done, the first time you open the jar there will be a little pop and really stinky smell. Those are the gasses escaping. Hope this answers your question.

After three days- stick it in the fridge (unless you are using proper canning techniques). Will stay in the fridge for months, Enjoy!

I definitely plan to try this. How long will it keep in the fridge after it is opened? How long will it keep on the shelf?

Other videos say you have to have room for gases to escape and to keep the lid loose.
Is that necessary on smaller batches?

You could use a shredder blade on a food processor but a blender will turn it to mush.
