  • check out the video of me boning a chicken out,i do 2 different ways 1 is a whole boneless chicken and the other is breast and thigh fillets. both however have the thigh bones removed, which is one of the most time consuming parts.and i still do it in 15 seconds.

  • this is exactly was BONING a chicken means. You remove everything from the back and chest. I think it's amazing how you just rips the brest meat off like it's nothing.

  • What I find amazing about Martin is his ability to do this fast and not cut himself!

  • there's a catch to it. He breaks the leg joints when he stretches out the chicken and relaxes it. Otherwise the leg portion would chop off so easily. The breast is hard to debone so quickly though.

  • He's a good chef. His humour? Maybe its his way of communicating. Just like a good teacher. Perhaps you should look it from another perspective. That way, you'll just admire his skills. Whether it is not or is better than other chefs. I'm sure all of you wouldn't want to attend a boring cooking lesson would you? That's where the humour comes in.

    It's a shame that Rachael Ray, Bobby Flay & Emeril (all overrated, IMO) are more 100x popular than Yan, Jacques Pepin or Mary Ann Esposito (the TRUE chefs)

  • MAE is The PBS chef with the longest-running cooking show on tv "Ciao Italia" which is produced by Rhode Island PBS as of 2005 (after years of being produced by NHPTV, from 1989-2004, IIRC)
