Velveeta Cheese is a brand of cheese that melts nice and velvety, smooth not stringy. Use whatever cheese you like the best, but you will be surprise how good this kind of cheese works the best, I use it to make cheese sauces, I also use to for my Potato soup. It's nice and creamy not stringy.

That cheese sauce makes the dish in my opinion. This one is great the next day for lunch too...

It is good for lunch the next day, and how quick and easy is that, zap it for 1 1/2 min. with a side salad and you'll have a nice lunch.
