It's called a "fill". He's using it to break up the section before the change that leads to the next phrase. As far as 'performance' goes: Let's see how good you are live night in, night out, when you have to deal with life on the road & you're in your mid 60's. I'd be willing to bet that it would be a significant challenge for you to achieve this level of performance. The man has nothing to prove to anyone, whereas you've proven quite a bit about yourself in just a 30-second post
