Sage has better tome rank(D as opposed to E, meaning that you can use Elfires from the start) and a better Magic base. Sage's magic caps at 30 while bishop's caps at 25. So Sage>Bishop. Even Serenes Forest says so.

That is why I made Rena and Marich into sages as soon as they promoted.
