My suggestions would be: catching the Manly ferry to explore Manly or the ferry to Darling harbour, if your not cruising on Sydney harbour and taking the sights you have missed Sydney at its most beautiful. Do the breathtaking coastal walk between Bondi beach and Bronte beach. Have a walk through the botanical gardens adjacent to the Opera House. Have some lunch at one of the restaurants overlooking the harbour at Darling Harbour. Sydney Zoo is brilliant and has the best view of Sydney.

I visited Sydney last summer(the Aussie winter). Sydney Tower wasn't mentioned.  The view from the observation deck was breath taking :)
