If you run the tires at 35 you break away from traction too easy when you run the lower pressure you hook up better, get better turns and it helps cushion your landing.
Tires running at low psi will still fully inflate when moving fast enough because of centrifugal force and will deflate when moving slower (i use the word deflate for lack of a better term) like when cornering so rolling resistance is really almost nully effected. its pysics
this video generalizes way to much. the range of pressure is different for tubeless and normal tires. Also it depends a lot on rider weight! Damn you have never ridden dh. the 25psi you recommend is way below the recommended 35psi that most manufacturers recommend.modern tires get the grip mostly from knob configuration and rubber compound and not so much from tire pressure. low tire pressures will give you rolling resistance and will flex when cornering.

Downhill tires have way different casing than traditional tires, which is why they can run lower pressures.
