I think what he's basically saying is if you're like water, you will be able to adapt to any situation that you are put in. Water forms into the shape of any "situation" that it is put in, and it can be very gentle like a calm flowing river, or be powerful like a raging waterfall. Being like water, is being able to adjust to anything, and this principle can be applied to life in general, not just fighting.
