@lilbrieze Start with your good quality non stick pan on a low to medium heat. When you add your first pancake turn the heat up a bit. If they look pale when you flip them turn the heat up more. If they are burnt turn the heat down.

@Beautywithin5 yes. :) try medium heat and wait for lots of bubbles to fill the top side before flipping. hope this helps...continue adjusting heat till you find what works for you.
@learn2bake never tasted soya milk... at least here in Finland we have lactose-free cow milk. the lactose has been removed physically (somehow). with a different recipe the lactose-free pancakes were like normal ones. :) tasted the same (except too much of them won't make my stomach hurt) and looked the same, even same texture.
@goldangel100 when you've got a batter where butter (at room temperature) causes the lumps, it's going to make your dish fluffier. But when you've got lumps in pancakes, the lumps are lumps of flower and you don't want that :)
Just made em! Too much egg taste so next time I will add some more milk instead, Mine was very rare and split widely on sites. Can I add more flour to make it thinker? Will it still be fluffy? Oh and It did not rise as shown. Can milk be taken our of fridge or it should be room temperature? Cold milk and cold eggs could be the reason why it did not pre-rise. Anybody please?

@DropDeadCurious Try reducing the heat a little bit and flip the pancakes a bit sooner that you have been doing. I think you have been cooking them too long on the first side.
1st time i. watched this and saw he left batter for 1hr i thought is he crazy but doing this and then knocking it back makes super light fluffy pancakes not heavy floury ones

@liderlo They must have self raising flour in Germany. If not just use plain flour but you will need the baking powder or you will end up with crepes. Self raising is just plain flour with raising agents in it anyway. Gluck!

@sanaa50 I wouldn't add more flour. If they were not as fluffly try adding a bit more baking powder. Also don't beat the mixture too much when it has risen. Beat it just long enough to make it droping consistency.
If you want fluffy pancakes DO NOT use an electric mixer to mix the batter. Over mixing makes flat rubbery pancakes. Mix by hand and only mix enough to incorporate the ingredients. Some lumps of unmixed dry ingredients are OK, and are in fact, desired.
