  • Both of you are not only gorgeous ladies but great culinary artistes too. We tried this recipe and believe me, it's a dish worthy of the epithet "the aristocrat of rice dishes"! But my only caveat is this: the quantity of salt that you use far exceeds my tolerance level and my BP hit the roof afterwards. This apart, we shall certainly return to your recipe which, in our humble opinion, deserves a top place in the Gastronomic Wonders of Asia. Onek donyobad!

  • biryani to be baked is seem something different to me,if i don't have an oven then how can i cook it on stove top

  • I love this...I have a small question. Instead of a big pot will it work in aluminum tray?

  • @veerukg : Yes, an aluminum tray will work fine but aluminum trays are thin and get hot might burn the biryani. Reduce the temperature, put the tray in the middle of the oven and cook for a little longer time.

    How can i do the same with chicken/prawns/fish? do i need to half cook and layer it instead of veggies or how? Thanks again!

  • I live in Japan and my oven limit is 220℃ and I dont have anything big pot can be put in hot oven. All my pot has prastic handle so it'll be melt. What should I do?

    Any metal or glass pan will do. If you don't have one big one, just divide it out into two batches.

  • @reiko120977 220℃ is 428°F. You should set your oven to 205℃.

    About your plastic handle, if it is attached with a screw you may be able to detach it; however, an oven-safe container is useful, so it would be worth it to buy one.

  • @meetgunn8 : Sorry, about the late response. You can take a big pot and boil water (about 2 inches high) and then put the biryani pot in that...kinda like double broiling and cook the biryani like that. 

  • Hi..Thanks for the recipe.I tried this and came very well...I have one question.I am from India and currently I am staying in USA.In India, our mixers can grind things in fine paste like dry/fresh coconut etc...Here I am not able to find out such kind of mixers.Can you suggest some brands/ shops where I can buy such mixer?once again thanks for recipe...

  • @trupti0182 : Well, unfortunately, we use mixers that are from India...we have a few others: magic bullet for wet grinding, coffee grinder for dry spices and we use a cuisinart for blending dosa/idli matters.

  • I don't get it. Cook the rice, cook the veggies and serve it. Whats the point of this layering up? Never the less: Great recipe! :)

    Both the rice and vegetables are cooked 3/4 of the way on their own and then finished off together. This allows the flavors to infuse into each other and make one complete flavorful dish.  Otherwise, you'd have plain white rice and vegetables :).

  • All your reciepes are great but this one is too cumbersome and too fancy then normal family reciepe. The vegetables were as if for 10 people.But anyhow good work

    Agreed...it is a long process and it does serve approx 8 ppl. However, if you have the time or are having a party, please give it a try. It really is worth the effort :)

  • Thanks so much! If I wanted to prep ahead of time - would it be possible to keep the layered mixture covered in the fridge for a few hours, then put it in the oven before serving? or would that ruin the texture of the rice?

  • Yes, you could layer and keep it to bake layer.

  • thanks for the wonderful recipe.....why didnt you add yogurt in the marination instead of adding it into the pan? does it make any difference? bcoz generally marination is done with yogurt i think.....please clarify

  • The yogurt tends to get really "watery" when we add it to the veggies in the beginning (due to the salt, the veggies release a lot of water) so we did it at a later time.

  • The time depends on the type of stove you have, the heat setting, and the type of pan you are using. Check the potato -- if you can cut through it with some pressure, it should be fine. If the knife goes through too quickly or easily, it's over cooked.

  • i dont have shahi jeera nor black cardamom,, can i use the normal once? do i need to add anything else as well? normally when i do biryani i use a bit of nutmeg,, do you think it will suit your style?

  • Yes, you can substitute regular cumin seeds and green cardamom. Nutmeg will also be good for this recipe.

  • That is a south indian biryani. This one is a north indian style biryani.
