Is it possible to make a cloth cube, ie a simulated pillow?

@CenarionCult yes, you can.. you could try upping the stiffness and bending values (into the 1000's), and making a vertex group that defines a more stiff area (eg: all but the edges, so the fabric can bend). Also, you can use soft bodies for probably a better result (do a search for 'blender soft body introduction' - a video with soft white innertubes)

@Alexa3D1 Clothes are coming in Part 3... there's some important points to go over before we get to clothing, which I'll be covering in Part 2, in which I'll make an animated shower curtain.
