At 29 seconds, his arm was no longer being threatened with hyper extension. He had already turned out of it, and was putting his hand on the mat to support himself. Either way, tapping out cannot consist of a single hand place on the mat. It requires at least more than one "tap".

From what I have learned form bjj, when trying to apply an armbar your legs should not cross, rather they should be parallel and try pinch the knees togeather so it can tight then elevate the hips from the ground and crank on the arm. If Sik would have done that it would have been hard to get out of. Then again it's hard to say what is correct in jui-jitsu, some say to cross your legs.

his biggest problem was that he didnt isolate the thumb. everything you said was correct, but you must also make sure the opponents thumb is pointing straight up and you hold it there, if you dont, they can rotate over their head and the sub is lost. try it once, just hold the arm and let the opponent roll over his head, then grab the hand and hold the thumb up and see if he can

a great example of that is in serra vs karo i believe, or was it st pierre 2? one of those fights serra uses that escape and they get a great shot of it.

we use this escape a lot in our gym, you have to be very fast with it, but just as your arm extends, you rotate over your head, this turns the arm to an angle that cannot be arm barred. this can easily be stopped as well. when Yoon dropped back into the arm bar, he should have grabbed the thumb and made sure it was pointing straight up, if he would have done this, Mousasi would not have been able to do that escape. But mousasi rocks either way..

He took it like a champ! You can say that his head must be made of bricks. He took like 3 or 4 minutes of non-stop shots to the back of the head. Kind of sad towards the end.
