In my country a teacher would never be allowed to do such things without getting fired. I mean this looks like a good (and fun) way to learn, but how did you do to make the goverment (or whoever decides such things) to let you do these things? :)
@Pingusbroder Schools have changed. Kids play all the time in schools as they see the value in games as it helps build social and interpersonal skills, builds community among many other things. Kids play math games, reading games, science games. As long as the educational goals are clear, many schools allow it.

I really hope that another video comes out soon. Well, I guess I can't force it. Also, an idea to introduce your classes to enemy mods while still keeping control is with the use of spawners. Just saying, it might helps you(for example to give the kids more different things to build around(in other words, to give the kids a reason to build mob traps and other things(including ways to protect their houses from mobs))).
MultiVerse! It's a Bukkit server..... You should use the plugin Admincmds also, it's good for a ton of multi-world commands such as weather control, time control, and tons of other stuff.... it stays up to date and the plugin dev for it is taking suggestions every day. You should probably use the zombe fly mod on your client also, but just for you.
I would like to see you do something like a friendly Survival Island with them. They might be scared with the mobs (But you could give them god mode) and they have to find the Curators Treasure and all of that. You might have to copy and past multiple survival islands (Which go quite deep) because I found, upon playing with my friend. That 2 people playing was a perfect number. It would teach them LOTS of restraint. And logical thinking, tons of teamwork (Including some give and take)
(Sorry for the spam) But if you EVER need any help building. I'd be more than willing. If you need more complex redstone piston things, I can do that (But don't expect me to make any computers :P )
I really think you should have a full day dedicated to minecraft teaching, so you aren't so limited. They would still have breaks, but it would mostly be for Minecraft. Or at least several hours.

How do you resist not filling in the holes for them? You've got dirt in your hand right there, they've got holes in the terrain. Put block in hole. You must be an excellent teacher to be able to keep your hands off like that.

Might I recommend, although, that with the pressure plates..?
If you hit the 'Q' key, it is set on default to drop whatever block you're holding.
If you drop a block over a pressure plate, it will weigh it down, and work just as if someone else were standing on it.
Just a simple way to work around being THE teacher.
