  • Not bad. I use a similar recipe, but avoid the grill cuz I have trouble keeping it controlled. Generally do it in the oven at 170* for about 2 hours and get that sort-of flimsy jerky that is cooked but still chewy. Mhhmm. Another method is to use furnace filters and a box fan. Layer the jerky in the crevices of a few filters and bungee cord them to a box fan (with an empty filter separating the meat filters and fan. Stick the fan in your window and come back in a few hours. Delicious!

  • @tangypasta I buy London Broil since the local store has it regularly on sale for $2 a pound. $10 makes a mess of jerky. I could never do this grill method - I have a dehydrator with 5 trays. Load it up at midnight and it's ready first thing in the morning.

    Cheapest, leanest cut is the important part. Also, if you have friends that hunt they are usually quite generous with their hauls. You'll have to cure it and cut it but that is one sure way of getting a mess of jerky on the (fairly) cheap.

  • dont forget to trim off as much of the fat as you can. the fat will go rancid after a while. if your going to eat it quickly you shouldnt have any problems though.

  • I thought about using a smoker for some beef jerky. After seen video, I really want to do it now.

    ABTOCMEPTb, marinading the meat is basically curing it. I've made beef jerky for about 3 years without a single problem. I don't use soy sauce like most poeple do, which has a high in sodium, but this and the worchestershire sauce are what preserves the meat. Additionally, slicing the meat very thin helps it to dry quickly enough before bacteria sets in.

  • Don't you have to cure the meat first to avoid bacteria? Dark, low oxygen and 140F temperature environment is a paradise for botulism. 170F for that type of marinade. No less. Cool voice!

  • Fat equals flavor..when you're "cooking beef" but when you're making jerky you do NOT want fat. It will turn stale as it sits at room temp.not good , and certainly not healthy !

  • There is a little too much marbeling and fat in the roast for me. Also......If I dont have the butchure slice the meat thin for me...I will take the meat home, place it in the freezer for about 1/2 hour unwraped..this will partially freeze the meat and make it MUCH easier to slice thin.

  • @bartjuhh12 On a dehydrator they would have been done in 4 hours. Just add a bottle of liquid smoke to make up for the smoke flavor. I make jerky once every couple of months. I use a meat slicer to make them thin, and my marinade consist of one large bottle of soy sauce, 1 bottle liquid smoke, Hickory preferred, & one cup packed light brown sugar. When the sugar melts into the sauce, it becomes perfect! You could add the spices as well. Everyone begs me for it when I make it, even all the kids.

  • @Chris0151Mc When you go with the grain it becomes tough like the stuff you buy in the store. I personally like it that way because I like to chew it for a while while I am working. But if you have weak teeth stay with the grain.

    Try to add lemon juice, the jerky becomes hotter.

  • Now thats a beef jerky recipe. you really should try this recipe.

    I do a few things differently.

    I use a food dehydrator, and liquid smoke.

    I also use a small amount of teriyaki sauce and a heaping teaspoon of fresh garlic in addition to the garlic and onion powder.

    Other than that its the same damn recipe and its AMAZING jerky.

    I sprinkle black and red pepper all over each piece before I turn on the dehydrator.

    I also marinade for about 20 hours with the meat almost fully submerged.
