Fat equals flavor..when you're "cooking beef" but when you're making jerky you do NOT want fat. It will turn stale as it sits at room temp.not good , and certainly not healthy !
There is a little too much marbeling and fat in the roast for me. Also......If I dont have the butchure slice the meat thin for me...I will take the meat home, place it in the freezer for about 1/2 hour unwraped..this will partially freeze the meat and make it MUCH easier to slice thin.

I use a meat slicer to make them thin, and my marinade consist of one large bottle of soy sauce, 1 bottle liquid smoke, Hickory preferred, & one cup packed light brown sugar. When the sugar melts into the sauce, it becomes perfect! You could add the spices as well. Everyone begs me for it when I make it, even all the kids.

I live in an apartment and can't barbecue. :P So if I do this in an electric stove, need I open the door every now and then to allow moisture to escape?

A great idea to use already soy sauce for the marinade - as you dont need additional salt.
Try to add lemon juice, the jerky becomes hotter.

Now thats a beef jerky recipe. you really should try this recipe.
I do a few things differently.
I use a food dehydrator, and liquid smoke.
I also use a small amount of teriyaki sauce and a heaping teaspoon of fresh garlic in addition to the garlic and onion powder.
Other than that its the same damn recipe and its AMAZING jerky.
I sprinkle black and red pepper all over each piece before I turn on the dehydrator.
I also marinade for about 20 hours with the meat almost fully submerged.
