  • What could I use to keep the fish nice and crispy? As mine just goes soggy after a few mins?

  • My children nag me all the time to make fish and chips and because I come from Blackpool I am a bit scared to make it because they have only eaten stuff from Senior's in my hometown which constantly wins "Chip Shop of the known Universe" awards.

    We live in Stuttgart so Chippies are few and far between if not down right non existent. I will take the plunge I think on the basis of this recipe.

    It sounds and looks so simple and your calming manner soothes my nerves.

    Fizzy beer or Guinness would be very nice. I do have a fish in Guinness batter and it is one of my favourites :)

  • That idea with the fizzy water is genius :O Gonna have to get a cheapy deep fat fryer and try this!

    I suppose you could also use beer :P Beer battered cod! Get some! :D

    The fizzy water makes the batter nice as it creates bubbles and make the batter nice and light.

    You are quite right, you can use beer instead of water.

    I also have another video on youtube that uses Guinness. The Guinness gives it a lovely flavour :)

  • Ooooooooooh :) Do you have any tips with the oil? My parents wont make things like that because the oil is a pain to deal with at the end and they wont let me make it myself. Seemed easy enough when you did it though!

    In the UK some local councils will let you dispose of used cooking oil in small containers & disposed of in your rubbish.

    You may have to read what the recommendation is in the US for the disposal of small amounts of oil.

    If you have large amounts that you have saved up you may need to take it to be recycled.

    Don’t throw it down the sink though.

    Maybe once you know what to do with the oil, your parents may be happier to cook this kind of dish.

    I would not normally use the oil again when I have cooked fish. I normally put it in a small container and get rid of it.

    Yes you can use plain water. The fizzy water will give you a better batter though because of all the bubbles.

    I know it looks like a lot of oil in the pan, but when the fish when served up is not dripping in oil and is quite tasty :)

    I would be difficult to make fish with batter using less oil.

    Fish and chip meals once came wrapped solely with a couple of layers of newspaper. The newspaper was used to absorb the oil/grease but there were concerns over ink poisoning (especially relating to the use of lead type in newspaper production) So eventually they phased out of this practice.

    well it was like the best thing iv ever had but it wasnt that crispy.. dono why guess my batter was a bit too thick :'( i used lemonade cuz didnt have fizzy water at home :P it was very tasty tho :P

    Maybe it was not crispy because the oil was not hot enough when you put the battered fish in the pan.

    Never used lemonade for better and new one for me. I did once try ginger beer.

    I have done an earlier video with Guinness instead of soda water. That is very nice and has proven very popular.

    I did this one for the non drinkers :)

    Ale is another good suggestion and I am sure would taste good.

    Next time I make it for dinner, I will give ale a try.

  • thats simplicity itself.i'm no cook but i run a charter boat and i am always catching cod ,haddock, plaice and lemon sole.my favourite tasting fish in batter is haddock...do you agree?.as for skinning them i never did get the hang of that but found that when cooked this way it comes off nicely anyway.

  • You really do not have any idea how to make traditional fish and chips. You have fallen in to the age old trap of putting too much emphasis on the batter and adding seasoning's... it isn't needed at all.

    Firstly. you have to understand the fundamental principle that makes Fish and Chips the most amazing meal ever to be put together... simplicity! That's the starting point... Secondly, the most important ingredient... I shall not be telling you what it is unfortunately, because its my living!

    In my other video that uses Guinness. I did use flour on the outside of the fish first before putting in the batter mix. It is mentioned early on in the vid but not seen (One of my early vids)

    I do normally use flour before using batter as this helps the batter stick to the fish.

    Although if you forget it will still work ok.

  • I used "Cod" in turkish that is "Morina" otherwise you can use "Haddock" in Turkish thats "mezgit balığı"

    Use the beer, that will do nicely!

    I have another version of this video on youtube using Guinness. You could watch that before you make the one with beer. You can use any beer, ale, larger etc. Try and use one that has a nice flavour :-)

    I have never tried it with chicken, but it may work with thin fillets, so they dont need to be cooked for so long.
