  • Keith, my parents are straight off the boat Jamaican so I know my way around a Jamaican kitchen. This recipe is a little different than my moms- but it looks damn good! This is a true Jamaican pot of oxtails guys (butter beans, ginger, scallion, onion, scotch bonnet, a bit of ketchup, soy sauce= all of that is the real deal!!) Love this video!!! And you are very handsome as well- I can see you on the food network!

  • Thanks so much! I would have never known what to do with the oxtail before I saw this lol

  • Also that ketchup and condesed milk is ingenious for the balancing of sweet and savory so I will try that along with your spiceblend sometime in the near future. Btw, you have awesome taste in music and great swag so be careful with the girlies chasing you with those and your skills :)

  • You cooked that similairly to how my family does. However, we use grace browning sauce instead of soy and an oxtail blend imported from family in Jamaica outside the herbs and veggies.

  • Hey Keith. You put in the garlic and then put in 2 inches of something else and call that garlic too. Is it ginger?

  • damn U SEXY!

  • Great my friend!!! Why you hate him? is a nice guy.

  • Why is everyone hating? Everyone has their own recipes. I would love to have that oxtail. EVERYONE send me your oxtail immediately! lol

  • You did not mention if it's possible to cook this dish in a slow cooker.

The pot you used ,,,what do you call that?

  • is that roy jones jr.??

  • I need that pot.. Do you sell it too.. Going to purchase these blends for sure :)

  • He never claimed this to be a traditional recipe of any sort. Its his recipe, it sounds great. Have an open mind people :3

  • @keithcookstv there are various senses to your taste buds. soy sauce adds a natural Umami component which adds a subtle savour. Ketchup balances the acidity with sweet and creates a perfectly balanced flavor profile as well as color.

  • Thank you for your quick reply.

  • Thank you for your quick response.

  • Hello,

I love your cooking videos and would like to make your version of ox tails w/rice and peas but I have one question. I apologize if this question has been answered but.... when you were making your seasoning paste you said 4 garlic cloves and 2 inches of garlic? What is 2 inches of garlic or did you mean 2 inches of ginger root? I'm confused at the moment....

  • @qtpa2tbeauty Thank you so much for your support! I appreciate you! :-) I meant 2 inches of ginger hahha. Make sure to use the Keith Lorren Oxtail seasoning! :-D

  • @qtpa2tbeauty He meant to say 2 inches of GINGER, I already asked him about that a while ago. It was the truth have fun and good luck making it.

  • I believe it isn't the traditional way of cooking caribean oxtail but so what it looks damn good!

  • way to many ingredients and prep... your very handsome

  • is that a pressure cooker you use to cook the OXTAILS in?

  • @envyii hahah im sorry i meant to say 2 inches ginger lol. i posted the full recipe at keithlorren. c o m thanks for watching!!!

  • @keithcookstv you put sugar in boiled dumplings? nah

  • I made the oxtail and rice and peas and it was such a hit that my Trini master chef mom loved it and the kids couldnt get enough! I will continue to use your recipes! I am so glad I discovered your videos on youtube and I am passing the word on!

  • YOU DID THAT BRUA!

  • keith that was great. Just when I thought you couldnt top your beef pattie video you came up with this. Do you do deserts too? Those buuter beans must have been already cooked. They liked can bean which can save time. Can you get them dry? You also looked like you rinsed them off. I tried buuter beans from the can but didnt rinse them and it had a metal taste. I think it was becasue they came from a can. Can I use lima beans instead?

  • @SuperReneeMiller hello my friend!!! thank you so much for watching. it means alot to me!! :-) yes i used canned butter beans and rinsed them off a few times. I don't mind using canned beans in this dish although i usually hate canned products because the beans are just an accent. in truth, any bean would work, but always rinse it off first to get rid of the canned taste and slime :-D hope to speak with you soon! my favorite thing in life is to make desserts so ill post videos soon. :-)

  • paramaribo........lol.........

  • @mizzsuriname wow thats where my grandfather is from!!

  • oh k well i thought is was a pressure cooker cause in your video it cooked around the same time as a pressure cooker about 2 hours...so for u to say it was a regular pot and u did it in 2 hours is um surprising considering that with a regular pot to cook oxtail takes about what 6 to maybe 8 hour from what i heard,so k,its nice to see a man liking to cook rather then a woman having to feel obligated to do it all the time..lol..and its surprising u know about suriname, usually people dont know...

  • @mizzsuriname haha wow 6 hours? unheard of in my kitchen and i would know ... I invented cooking! haha I hope you enjoy the recipe. what part of suriname are you from?

  • Same question....pressure cooker?

  • @PaintItOrange my pressure seal was broken so i used it as a regular pot :-)

  • @keithcookstv hey did you take the seeds out of the scotch bonnet pepper.....my throat is burning! lol ;P but its good =) thnx!

  • @PaintItOrange hahahah no i kept the seeds in!! :-) but if you want it less spicy, remove the seeds first! thanks for watching. make sure to visit my website for new recipes and to order my spices!! ;-) keithlorren. c om

  • @keithcookstv lol nvrmind i added potatoes & carrots and cooked it a lil more it was awesome!! Spice and all :p lol i dont think ive ever been so full!!!

  • You invited cooking? You are a mess! Keep up the excellent work and I will keep watching. God bless!

  • hi..is that a pressure cooker your using?

  • @mizzsuriname i used a regular pot and slow cooked it. :-)

  • this is a really good video...using it to help me for my first time making oxtails on my own. if i have the canned butterbeans, should i drain the juice and add only the beans or should i only add the beans? and about how much water should i add if i am only making about 2 pounds of oxtails? thanx

  • @dshel003 yes, please drain the juice from the beans. never use the liquid from the can. also make sure to order my oxtail seasoning at keithlorren.c o m. itl make all the difference in the world!! if you are using 2 lbs of oxtail, go ahead and halve the recipe i have listed and it should be fine. thanks for watching!

  • what degrees should i have the stove top on when im letting the oxtails simmer?

  • @MROLLE1200 Medium heat will work. :-)

  • thanks for this ..... ive been following your stuff and your pretty good! ............. I also have a request for you, can you do a ribs recipe?

  • Oh wow I am seeing this video too late. LOL WHAT DOES THE EVAPORATED MILK DO??????????????

  • @Teresita40 it makes love to the dumplings in the pot and creates a magical gravy :-)

  • Hey. Can you help me cook them? I don't want to ruin them.

  • Keith, Have you considered making a video and sending it to FoodNetwork?? I can almost taste and smell the food as you are making it. You are indeed a natural! Both the classroom(professor) and television are calling you. BTW, send me a plate... xoxo!

  • I love this video how did you get the gravy to thicken before you added the butter beans and dumpling?

  • I love this video how did you get the gravy to thicken before you added the butter beans and dumpling?

  • @sympleetc it thickens slightly on its own, as the liquids evaporate. The dumpling are what really thickens it. thanks for watching!! make sure to order my oxtail seasoning!!! it wont be the same without it!!

  • Rude boi, mek some fry flour!!!

  • Keith, I honestly wish a brother like you were on the food network. You have the personality and excitement; you are gregarious when you cook. Hmmmm. I can taste the food as you cook.
