  • @mswifeypoes The stock will last for 2 to 3 months in the freezer. I usually store it in good quality freezer bags in different sized portions. For instance, some bags I will only put 1 cup of broth in for stir fries; while other bags I'll place 3 cups for soups or stews for me and my husband. Portion them out and label them according to your needs :)

  • Great recipe... again! USDA recommends not rinsing meat. According to their site: "Washing raw poultry, beef, pork, lamb, or veal before cooking it is not recommended. Some consumers think they are removing bacteria from the meat and making it safe. For safety, use a food thermometer to be sure the food has reached a safe minimum internal temperature..."

  • @tattooyu There are two different thoughts on washing meat. My grandmother always rinsed the meat and so does my mother in law. I do it simply b/c I can feel the difference. When it comes out of the package it feels slimy that is the main reason why I rinse it. I also think the USDA rec was put in place so that the germs don't spread into the sink and surrounding areas. So if you are careful and don't touch anything and clean your sink after then it is best to rinse the meat :)

  • @tattooyu eeeeeeeewww gross. U could never eat unwashed poultry, the taste is eeh, n the smell... it'l make a nasty stock...makes a huge difference when you clean meat. In Chinese cooking often times meat is washed, blanched in boiling water then used in whatever preparation. In my house we often wash and drain it several times, for the last wash we often scrub it with lime and salt to get rid of gamey taste. The only meat we don't wash is beef because it tastes fine if one skips this.

  • How long does it keep for? If I want to make a recipe using the stock, should I try to make the stock within a couple days, or can I make a big batch and dip from it for a while? What would be the best way to store it?

  • @SilverLionGR Yes you could use this as a base, but you would need to add other ingredients to flavor the soup :)
