@hazymat When you steam your milk, you should angle it so that it starts to form a whirlpool, and you can lower the mug to let in more air if you wish. But for the last 20-30 degrees you shouldn't let in any large amounts of air (you shouldn't hear the noisy farty sound anymore). The milk should have an awesome velvety texture.
Would you please make a good video of your milk-texturing process? I have an excellent machine (Giotto Evoluzione) but I have such a problem trying to get milk usable for latte art!
Nice art. To make microfoam use very cold whole or 2% milk. Some milks are better than others. Experiment. A good espresso machine with a powerful steam wand is essential. Add air to the milk for the first 10-15 sec (tip just below the surface, you will hear a sucking sound) then roll it (submerge the tip until the milk "rolls) until it is up to temp. Tap out the big bubbles swirl and pour.

@hazymat it's called microfoam, and it's not so hard. only stretch the milk for the first couple seconds of steaming (literally only the first second or so for latte milk) and then try to find a sweet spot so that it churns and appears to "roll over" itself. at the 140-160F temperature mark - not hotter, it will ruin it - turn off the steam, and wack your milk pitcher against the counter - do it fucking hard, until any bubbles are gone. that's all there is to it.
good job!!! i am startin to do art and i can do a heart (simplelest) and rosseta... the thing that sucks is that i work at a place that doesnt use china... we use a supeautomatic... weak espresso and only have ONE descent pot for art... i would love to openn up my own shop someday though...

Another tip is to not steam too fast. I reduce the number of holes in my steam wand to allow more time and control.
