I have a question about your fryer. When you fry the fish don't the temperature drop just a bit or does this fryer keep the temp right at all times. I have a Waring and the temp drops then comes back up. Would like to have a fryer like yours seems like a good investment!
This looks great!!! I am definitely trying these recipes. Your explanation of each step is excellent...I will have to check out some of your other recipes Thank You
I noticed you have a deep fryer. I've read that deep fryer's can cause a lingering smell of burnt oil in your kitchen. Is this accurate? I was advised to only use deep fryers outdoors. Thanks!
I luvs me sum good catfish...best catfish i be havin was down there in n'awlins...i be buyin catfish everyday...i eats catfish in the mornin, catfish at midday and catfish at midnight...i be lovin me sum good catfish...mmmmm, i be lickin my fingers too...catfish be real good...i'm gonna fry me up a batch of them suckers now...y'all be good now.
That catfish looks amazingly delicious! If i was to cooked the full filet should i leave it in the deep fryer a little longer than 8 minutes? or is 8 minutes enough to fully cook the fish?
PS: i need to get myself one of those electric deep fryers!!! Thanks for sharing your receipes
Hey Scott. I love your recipes. I also live in Portland and am looking for a good seafood/butcher. I hate having to settle for what I can find at Fred Meyer, but I hate the prices at Whole Foods, or Zupans...do you have any suggestions for me for a place to find items like shrimp, crawfish, catfish, andouille, etc.??? thanks.
I like buying seafood at some of the asian markets around town like Uwajamaya or H-Mart. As for butchers, I do most of my own butchering and buy my beef from a local farmer. I'd recommend looking around your neighborhood for a stand-alone butcher and give them a try... you may just hit the jackpot.
I just found your videos!!! Today I made my first gumbo from scratch.... i've always cheated with the mixes! Wish I would have found your video BEFORE I started! Would've saved me A LOT of trouble.... you do a great job explaining everything and your recipes are great!
I have been frying catfish lately and everywhere I buy the fish from, it always tastes muddy like it just came out of a dirty pond. Is there any suggestion you might have
Generally Baking Powder and Baking Soda are used to make a baked product (like cake or cookies and some breads) light and fluffy. In this recipe it just gives the crust a bit of a flakiness.
Cuisinart makes a great food processor, but there are many other brands that make really great ones too. Look for a solid construction, steel blades, and easy to use button operation. If you're in doubt, go to a well-respected kitchen store and talk to the sales staff. They'll be able to answer your specific questions about the products they carry.
Aww,looks Soo Good!
