When rolling the initial small disc, try to roll it such that the center is thicker than the edges. The edges are gathered and will make the opposite side thick also. This will prevent the dough in the center from becoming too thin and letting the potato out. Good Luck!

The rolling pi is actually a lazy susan...it can be bought at any store that sells kitchen products. Ask for Marble Lazy Susan and not Rolling Pin.
