  • which potatoes do you use for paranthas, tikkis, vadas etc. I don't like the texture of any potatoes here in the USA

  • @amitkp80 : We got it from a kitchen store quite a while ago and it was under 20 dollars.

  • interesting in my home recepe we grate the onion and cook it with a little oil along with the other spices and then add it to the mashed potato. also turmeric will give a nice uniform colour to it.

    Chat Masala is a blend of many different spices. You can find it at any Indian grocery store or online.

    Cilantro is also known as coriander leaves or dhaniya. Yes, it is used commonly as a garnish in many Indian dishes.

  • @patisserie1 : In Hindi it is called a "Chakla". What we have used is a marble Lazy Susan and it does the job well :) We bought it at the kitchen store.

    I made aloo paratha as per your measurement ,but while rolling paratha ,stuffing does not spread in the middle part of paratha and it tastes as plain paratha in middle and some time it come out while rolling , why it had happened ? what was the mistake ? what shoud i do for that?

  • @rinku1729 : The part that you twist once the alu has been stuffed in is probably very thick and fat so it is taking over. Pinch some of the atta out if you feel it's too much.

  • @deepika0911 : Medium heat but the tawa needs to be really hot before you put the paratha on it.

    Although Chapati flour says "Whole Wheat" on the package, it is milled a little more than the whole wheat flour you find in American grocery stores. Therefore, the color is somewhat lighter.

  • Hi, i tried this... but d paratha started to open up... i refrigerated d potatoes b4 i rolled them... cud tht b d problem... it tasted fine though :)

  • Fantastic recipe. However, one word of CAUTION: while spraying oil onto any heated surface, the rule of thumb is to remove the tawa away from the flame for a second and then spray. Or turn the flame off. Whichever is easier. So always spray away from the flame.

    You don't want a fireball while cooking something this delicious!

  • You can use a non-stick skillet or even a cast iron pan will work.

  • Saba... I have never in my life owned a tawa and I make rotis almost everyday in my non stick frying pan.

  • The rolling pi is actually a lazy susan...it can be bought at any store that sells kitchen products. Ask for Marble Lazy Susan and not Rolling Pin.

  • I've actually discovered the Silpat for rolling rotis and stuff, it's great because nothing sticks.

    raw onions ??? Yes, it tastes so better. If you eat aloo paratha anywhere in north/delhi/punjab its raw onions only. In fact you can get pyaz ( raw onion ) parathas also on any dhaba. I love them. It's matter of personal taste.

  • @harshme1980 hehe...yes I know that now...I commented about two years ago and I didn't cook back then...but now i know...my dad opened an Indian restaurant and the chef is from Punjab, he makes them just like this! And I LOVE them!! LOL :)

  • when i roll out, the potato came out of the dough

  • When rolling the initial small disc, try to roll it such that the center is thicker than the edges. The edges are gathered and will make the opposite side thick also. This will prevent the dough in the center from becoming too thin and letting the potato out. Good Luck!

  • Tried gobi paratha taking some tips from seeing u roll out parathas & finally(read FINALLY ;) )I was able to make fantastic parathas... :)
