It took him about 3 years to go from about 220-230 to 263. He always had to cut a lot of weight as a light heavyweight. For years he made the mistake of going light heavyweight while he was actually a heavyweight. The weight gain is not as extreme as many of the overeem haters make it look.

He didn't just fight Saki once. Golden Glory is notorious for having sparring at fight levels of intensity, and he sparred with Saki many times... as well as guys like Zimmerman, Leko, and a bunch of other guys with standup MILES above fucking Dos Santos' "boxing"
I agree a healthy Saki would win, but Overeem has WAY more legit striking than JDS, despite what the tuff noobs like to think.
