Don't follow this recipe. It's bullshit. You should split the eggs, beat the yolks with the sugar then beat the whites separately and fold in with the yolks which are also combined with the schocolate.

All you need to do is as soon as it comes out of the oven, remove the paper, put a damp cloth over it and pre-roll it without any stuffing. You let it sit for a while in the fridge. This prevents the cracking and makes it easy to roll again when you add the filling :-)
