If I span the knife in front of green screen, it would have been harder to key out the background, because the motion blur would make the edge of the knife fuzzy.
I recorded the knife sitting still, to make it easier to erase the background, but then moved the light around so it wasn't just a still image. Then I span it and put the background in in AE.
I did a similar thing with the potato asteroid in Jethro Atom.
an alternate way to do this could be to record your knife spinning on a green screen (put green paper on a table and spin the knife) and then record spinning around your room very fast.
